Chicken breasts are the most dietary part of the whole poultry carcass, but the peculiarity of meat is that it requires delicate cooking, otherwise it becomes dry and tough. It is quite possible to preserve the juiciness of the breast, you just need to be able to cook it correctly.
Baked chicken breast
This recipe will require:
- 2 chicken breasts;
- 200 g sour cream;
- 100 g champignons;
- 1 egg;
- 1 garlic tooth;
- 1 tablespoon of vegetable oil;
- salt and spices to taste.
Fillet the chicken breasts by cutting off two wide slices of meat on either side of the bone. It is not necessary to pre-beat the meat, otherwise the layers of chicken fillets will turn out to be too thin and they will come out more like a roll than a cutlet. Whisk sour cream with egg and salt, adding garlic, passed through a press. Grease a deep baking dish in which you place the chicken breast fillets in one layer. Rinse the mushrooms, cut and fry in vegetable oil. Sprinkle the meat with spices, put the mushrooms on it, then fill it with a mixture of sour cream and eggs. Place the baking dish in an oven preheated to 180 degrees and leave in it for half an hour. This recipe can be slightly diversified if, 5 minutes before turning off the oven, while the meat is cooking, pour hard grated cheese on top of it. It forms a tender crust on the meat and changes the taste.
If there is no chicken egg, you can cook without it, the meat will turn out juicy, but there will be no golden crust on it, it is the egg mixture that forms it
Delicious fried chicken breast
Chicken breast can not only be boiled, using it to make broth. If you fry it correctly, then no pork can compare with it in juiciness.
For such a recipe you need:
- 500 g chicken breast fillet;
- 1 egg;
- 3 tablespoons of flour;
- 50 g breadcrumbs;
- 40 g butter;
- salt to taste;
- 2 tablespoons vegetable oil.
Cut the butter into cubes, the number of which should correspond to the number of fillet pieces, and freeze in the freezer. In each of the fillet layers, make a pocket and put a piece of butter in it, salt and roll the meat in flour. After that, dip each piece in an egg and roll in breadcrumbs. Place the chicken breast in a skillet with hot oil and fry on both sides until golden brown. During such frying, oil is stored inside, being sealed in an envelope of meat in breadcrumbs, making it juicy and soft, which is further facilitated by breading.
Braised chicken breast
Ingredients:
- Fillet of 1 chicken breast;
- 200 g canned pineapple;
- 200 g cream 20% fat;
- salt, curry seasoning.
- 1 tablespoon vegetable oil.
Breaded chicken or turkey is no less juicy. To do this, cut the chicken breast fillet into pieces and fry for a few minutes in hot oil. You cannot fry the breast for a long time, otherwise it will become dry. Add cream, pineapple slices, curry, salt to the meat and simmer until tender, 10 minutes. The meat prepared according to this recipe takes on a sweetish flavor, is very tender, and has a pleasant color from the curry seasoning. The breast is no less original if you cook it not only with canned pineapples, but also with peaches.
These are not the lowest calorie and dietary recipes for delicious breasts. If you want to cook it with a minimum amount of fat, use a double boiler or bake the breast in foil.
