Chicken breast and cucumber salad. Video
This light salad with chicken and cucumbers is a real classic of European cuisine. You can use smoked, boiled, or grilled chicken breasts, and vary sauces and additives. Chicken and cucumber salad has a moderate calorie content, so it can be recommended for dietary nutrition.
Oriental salad with chicken breast, cucumber and avocado
You will need: – 300 g of chicken fillet; – 1 ripe avocado; – 1 sweet and sour apple; – 1 cucumber; – 5 tablespoons of natural yogurt without additives; – vegetable oil for frying; – 0,5 lemon; – a bunch of romaine lettuce; – salt; – freshly ground black pepper.
Rinse the chicken fillet, peel off the films, pat dry with a paper towel and rub with salt and pepper. Heat some vegetable oil in a skillet and fry the fillets in it until tender. Cool the chicken and cut it into strips.
Squeeze lemon juice. Cut the avocado in half, remove the pit, peel off the peel. Chop the pulp into cubes, place in a bowl and drizzle with lemon juice. Peel the cucumber and apple from the skin and seeds, cut into thin slices. Sprinkle the apple with lemon juice so it doesn’t darken.
Line a plate with lettuce leaves. Place chicken, avocado cubes, apple and cucumber on top. Pour salted yogurt over the salad and serve.
Chicken breast salad with cucumbers and rice
You will need: – 500 g of rice; – 400 g of chicken breast; – 200 g of pickled mushrooms; – 1 onion; – 2 small cucumbers; – mayonnaise; – 1 bunch of lettuce leaves; – 1 bunch of parsley; – 6 cherry tomatoes; – 6 quail eggs; – salt; – ground black pepper.
Boil chicken breast, eggs and rice and cool. Rinse the pickled mushrooms and chop. Chop the onion into thin half rings. Cut the chicken and cucumbers into strips, cut the cherry tomatoes and quail eggs in half.
If you like a richer taste, replace fresh cucumbers with pickled ones
Mix rice, cucumbers, onions, honey mushrooms and chicken, add finely chopped parsley, season with mayonnaise. Line a flat plate with lettuce leaves, and place a mixture of chicken, mushrooms and rice on top of a hill. Sprinkle the salad with freshly ground black pepper and garnish with tomato and egg halves.
Simple salad with chicken, cucumber and apple
– 250 g smoked chicken fillet; – 1 large sweet apple; – 1 cucumber; – 3 tablespoons of canned green peas; – 100 ml of natural yogurt; – 1 teaspoon of mustard; – 1 teaspoon lemon juice; – salt; – ground black pepper; – parsley.
Cut the smoked chicken fillet and cucumber, peeled from skin and seeds, into strips. Peel and chop the apple. Mix apple, cucumber and chicken, add green peas. Combine yogurt, lemon juice, pepper, salt and mustard in a bowl. Season the salad with the sauce and garnish with parsley.
