The combination of meat and fruit provides salads with a rich taste and freshness. You can choose savory, sour fruits, or prefer more tender and sweet fruits, such as pears. It goes well with chicken – boiled, fried or grilled.

French salad with chicken fillet, cheese and pear

Try making an original warm salad that combines the sweetness of pear, tenderness of chicken, and the tanginess of goat cheese. This dish contains a minimum of calories and is suitable for dietary meals.

You will need: – 200 g of chicken fillet; – 1 large ripe pear; – 50 g of goat cheese; – 1 tablespoon dried cranberries; – 70 g of fresh mushrooms; – a mixture of salads (arugula and frize); – spinach greens; – 1 lime; – salt; – freshly ground black pepper; – olive oil.

Peel the chicken fillet from excess fat and films, rinse and dry. Fry the chicken in hot olive oil until golden brown. Peel the pear, remove the seeds, cut the pulp into thin slices. Chop the cheese into cubes and lightly fry in a dry frying pan. Cut the champignons into slices and fry too. Make sure that the mushrooms do not burn, otherwise they will acquire a bitter taste.

Place the frize, spinach and arugula mixture in a salad bowl, add diced chicken breast, dried cranberries, goat cheese and pear slices. Squeeze the juice out of the lime and chop the zest finely. In a separate bowl, combine the olive oil, lime juice and zest, and salt. Drizzle the dressing over the salad and sprinkle with freshly ground black pepper. Stir gently and serve warm. Slices of a fresh baguette and a glass of well-chilled rosé wine are a good addition to the salad.

You can use lemon instead of lime for dressing.

Chicken, pear and celery salad

Try the smoked chicken and pear light appetizer, complemented by fresh celery; it is perfect for serving at buffets or cocktails.

You will need: – 1 large smoked chicken breast; – 1 juicy pear; – 2 stalks of celery; – 0,5 cups of shelled walnuts; – 1 tablespoon lemon juice; – 2 tablespoons of low-fat sour cream; – salt; – freshly ground black pepper; – parsley.

Finely chop the chicken breast and celery, peeled from tough fibers. Peel the pear and chop into cubes. Pour lemon juice over it, stir. Pound the walnuts in a mortar, mix sour cream with salt and pepper.

Place a layer of celery cubes in cocktail glasses, then chicken fillet and chopped pear. Pour sour cream over the salad and sprinkle with crushed walnuts. Keep lettuce cold before serving. Garnish with parsley and thin lemon slices.
