Cherry dumplings: how to cook. Video
Sweet dumplings with cherries are one of the most widespread and popular dishes of Ukrainian cuisine. Their characteristic feature is a soft and tender dough, which is not customary to knead in water, and the use of berry syrup, which gives the dish a pleasant taste.
Recipe for making dough for dumplings
For classic Ukrainian dumplings, the usual Russian mixture of water, salt and flour is completely unsuitable. Instead, other ingredients should be taken:
– 250 g of kefir; – 650 g of flour; – 1 egg; – 3 tbsp. sugar; – a pinch of salt; – 1 tsp. soda.
Pour kefir into a bowl, then add salt, soda, raw egg and sugar, mix the resulting mixture thoroughly.
It is very important to remember that you do not need to extinguish soda, it will be enough just to mix it with sour kefir. If you extinguish the baking soda with vinegar, the airy and tender dough will not work.
After stirring kefir with other ingredients, begin to gradually add flour to the bowl, stirring the resulting mass. Then knead the dough with your hands. Note that you may need some more flour to sprinkle on your work surface. In this case, the dumplings will not stick to your hands.
Leave the dough to rest for half an hour, and then roll it out, turning it into a not too thin cake. Cut out round blanks for dumplings with a glass and start making the filling.
How to prepare cherries for filling
For the filling, you need 500 g of berries. Rinse the cherries thoroughly and then remove the seeds from them without cutting the berries. This can be done using a special tool or a simple pin.
There is no need to throw away the seeds, because they can be used to make an excellent gravy for dumplings.
The cherries will most likely produce juice when you peel them, and this juice should be poured into a separate bowl. Then the berries should be sprinkled with sugar to taste. Focus on the characteristics of the selected variety: the sour the cherries, the more sugar you will need. You can not sprinkle all the berries at once, but add a little sugar to each dumpling.
How to make dumplings with cherries
Place 2-4 berries on each dough circle and pinch the edges. Try to sculpt the dumplings carefully so that the dough does not splatter in the water and the filling does not fall out. Boil water, salt it, add 1 tsp. vegetable oil and gently spoon dumplings into a saucepan. As soon as they come up, remove the pan from the heat, close the lid and leave for another 2-3 minutes, and then put the dumplings on a dish and brush with butter.
While the dumplings are cooking, make the broth. Take 3/4 cup water, boil and add cherry pits to the water. Boil them for 10-15 minutes, then strain, add sugar and cherry juice, cool and pour over the dumplings with the resulting liquid.
