Cherry cider: recipe at home

When it comes to cider, for some reason, many people immediately remember only the apple low-alcohol carbonated drink. Of course, apple cider is a classic. But what about cherry cider?

Believe me, even the most expensive brands cannot be compared with natural homemade cherry cider, where, apart from natural ingredients, there is nothing superfluous.

Tips before starting

  1. Freshly picked cherries should lie down for a couple of days in a warm place so that they soften a little and better release the juice during cooking.

  2. Cherries, like other fruits and berries, cannot be washed. Wild yeast, which is on the surface of the berries, is needed to “start” the fermentation process.

  3. Be sure to remove the ponytails, rotten and moldy fruits.

  4. The amount of ingredients that are indicated in the recipe change only in proportion to each other.

Cherry cider recipe

Ingredients

  1. Ripe cherries – 4 kg

  2. Water – 3 L

  3. Granulated sugar – 2 kg

Method of preparation

  1. To begin with, we need to thoroughly knead the cherries in a convenient container, and then add water.

  2. We cover the neck with gauze and leave for two days in a dark, warm place.

  3. After two days, we filter the cherry juice through cheesecloth and squeeze the pulp well.

  4. The resulting juice is mixed with sugar. It is important that the crystals are completely dissolved.

  5. Pour the liquid into a fermentation container (cans can be used) and leave for 4-6 days at room temperature in a room where the sun’s rays do not fall.

  6. As soon as the first signs of fermentation appear, strain the cherry cider through cheesecloth into a clean container and install a water seal. If one is not at hand, then you can use a medical glove with a small hole on one of the fingers.

  7. We transfer the container to a dark place for 1–1,5 months.

  8. After complete fermentation, we bottle the cider.

  9. To start the champagne process, keep the drink for 2-3 months in a cool place.

  10. As soon as the cherry cider becomes transparent, you can proceed to the tasting.
