Cheesecake on shortcrust pastry
Ingredients: – 150 g margarine; – 2 tbsp. wheat flour; – 2 chicken yolks; – 5 tbsp. sugar; – 1,5 tsp each. baking powder and vanillin; – vegetable oil; For cream: – 400 g of cream cheese (philadelphia, almette, buco); – 4 tbsp. powdered sugar; – 2 chicken eggs; – 100 ml of 30% cream.
Before baking the dough, you need to pierce it in several places with a fork so that it does not swell when cooking
Leave the margarine at room temperature for 40 minutes, then mash it with a spoon, combine with the yolks, sugar, vanilla and stir. Mix the flour with baking powder, add to the butter mass and knead the dough with your hands. Preheat oven to 180 ° C. Prepare 2 ovenproof round tins, one slightly larger than the other, for example 23 cm and 26 cm. Coat the smaller one with vegetable oil and place the cheesecake base in it. Spread it over the bottom and sides of the dish and send to bake for 15 minutes until half cooked, then remove and cool. Put cheese in a bowl, sprinkle with powdered sugar and stir until smooth. Beat the eggs there, pour in the cream and beat the cream thoroughly with a mixer until lightness. Transfer the cheese filling to the cooled crust and smooth well. Paste the shape into its large copy, which you fill with water to the middle of the smaller one. Place the cheesecake in the oven and bake it for 1 hour and 20 minutes at 160 ° C. Turn off the heat and open the oven door slightly. Let the pie sit in it for at least another hour. When it has cooled down and the cheese cream has set, remove the large dish with water, and wipe the smaller one with cheesecake with a towel and refrigerate for 4-8 hours. Cut the finished pie into 8-12 servings, garnish with berries or jam, if desired, and serve with tea.
