Cookies can be more than just sweet. For the snack table, you can prepare cheese-based options – such cheese biscuits can successfully replace traditional tartlets and canapes. Use spicy or unleavened cheese, complementing it with herbs, caraway seeds, sesame seeds, and other ingredients.

Make crumbly shortbread cookies with grated cheese – perfect for a festive table. Finished products are decorated with caraway seeds – salty cheese will perfectly complement its delicate taste. If you don’t like cumin, change the recipe by sprinkling sesame seeds on the cookies.
You will need: – 200 g of cheese (for example, Emmental); – 200 g of butter; – 300 g of flour; – 3 egg yolks; – 1 teaspoon of caraway seeds; – 2 tablespoons of sour cream; – 1 egg for lubrication; – salt.
Make shortbread dough. Sift flour into a bowl, add butter and chop the mixture into crumbs. Grate the cheese and add it to the butter and flour mixture. Season with salt and stir, then add sour cream and egg yolks to a bowl. Knead a light dough quickly.
Gather the dough into a lump, wrap with plastic wrap and refrigerate for a quarter of an hour. Then take it out and roll it out on a floured board. You should have a finger thick layer. Cut out small circles with a circular notch or glass and place them on a baking sheet dampened with water.
Beat the egg and brush the surface of the products with it. Then sprinkle the cookies with caraway seeds and place the baking sheet in the oven at 180 ° C. Bake until light golden brown.
Be careful not to brown the cookies too much, otherwise they will turn out bitter.
You will need: – 300 g of wheat flour; – 2 eggs; – 200 g of butter or margarine; – 250 g of hot cheese; – 1 teaspoon of dried parsley; – 1 yolk; – coarse sea salt for sprinkling.

Roll the frozen dough into a layer half a finger thick, put a piece of butter on it – in shape it should correspond to the cake, but have a slightly smaller size. Wrap the dough in an envelope and roll it back into a layer. Then fold in three and set aside in the cold.
After a quarter of an hour, take out the dough, roll it out and fold it in half again, making sure that the folded edge is on the right all the time. Remove the dough again in the cold, and then roll it out again.
Grate the cheese. Remove the dough, roll it out and spread it on an even layer of cheese. Roll up the cheese dough, roll out again, fold and put away in the cold. Repeat the procedure again and start cutting the cookies.
You can speed up the process by using ready-made puff pastry. Roll it into a thin layer, sprinkle with grated cheese, fold and roll again. Chill the folded dough and repeat the rolling and folding process
Roll out the dough in a very thin layer – its thickness should not exceed 3 mm. Lubricate the layer with a beaten egg, lightly sprinkle with salt and cut into thin strips. Spread the cookies on a baking sheet and place them in an oven preheated to 220 ° C. Bake items until golden brown. Serve ready-made cheese sticks with wine or beer.
