Chateau de Montifaud (“Chateau de Montifa”)

Château de Montifaux has been made from grapes from two well-known regions of Cognac – Grande Champagne and Petite Champagne, since 1837. Its distinctive features are a bright color and a rich fruity aftertaste. Each time, representatives of three generations of the Valle family, the founders and owners of the brand, gather to taste a new drink in order to ensure that the main characteristics of the brand are preserved.

About the manufacturer. “Château de Montifaut” is the name of the estate where the sixth generation of Vallet lives. The history of the brand began in 1810, when the Valle family bought 7 hectares of land in the vicinity of Cognac and built an estate. The first grape seedlings were planted by Augustin Vallee in 1837 and since then the production of cognac has become a traditional family business.

Today Vallet vineyards occupy 68 hectares in the chalky soils of Champagne. The grapes grown in each of the regions have their own differences: cognac spirits from Grand Champagne with a bright fruity taste, and from Petit Champagne – with a floral one.

In the production of cognac, only old barrels are used, in which cognac spirits were stored for at least 10 years. Thus, it is possible to avoid the “oak” taste of cognac. Wine materials from Grande Champagne aged in such a container become slightly tart and richly fruity, while from Petite Champagne they acquire the aroma of linden and grape flowers.

Dyes are not added to cognac, even caramel, and a bright fiery color is provided by a unique technology: distilled water, with which blends are diluted, reducing the strength, is aged for at least a year in those ten-year-old cognac barrels. After aging, the water becomes bright red and acquires a strength of 20%.

All stages of the production of drinks – from grape processing to bottling – take place in the Vallet castle. Restaurateurs and bartenders recommend Chateau de Montifaut only as a digestif – it is not even diluted with ice and is not used in cocktails.

Types of cognac “Chateau de Montefo”

Chateau de Montifaud 20 Years Old (40%). Bright golden-amber drink with the aroma of linden flowers, dried apricots, chocolate and prunes. Mild nutty flavor with a long fruity aftertaste.

Chateau de Montifaud VSOP, Fine Petite Champagne AOC (40%). The fiery amber drink pleasantly smells of lime blossom. Velvety taste with notes of dried apricots and pears. Long grape-apricot aftertaste.

Chateau de Montifaud VSOP “Sabina” (40%). Golden-amber cognac with fiery reflections and the aroma of linden flowers and grapes. Harmonious velvety taste with tones of pear and apricot, pear aftertaste of medium duration.
