- 500 g mushrooms;
- 2 onion heads;
- 3 tbsp. l. grated hard cheese;
- 2 carrots;

- Rinse the legs in water, blot excess liquid with a paper towel.
- Carefully remove the skin from the legs to make a “stocking” of leather. To do this, from the very top, pull the skin down the leg to the very bone, making cuts in those places where the skin is connected to the meat.
- With a sharp knife, carefully cut off the bone along with the skin.
- Cut the meat, cut into small cubes, or pass it through a meat grinder.
