Catfish in lemon juice
Ingredients: – catfish weighing 1–1,5 kg; – 1,5 lemons; – onion head; – tomato; – spices for fish; – salt and black pepper to taste.
To rid the fish of the unpleasant bottom odor, it is necessary to properly prepare it. To do this, clean the catfish, gut, cut off the head and fins. Then rinse it several times under running water. Pat dry and cut into 3-4 pieces. Season them with salt and pepper. Rub with spices. Leave for half an hour to soak the fish.
Cut the onion and tomatoes into slices, half the lemon into thin slices. Place each fish bite on foil. Put a circle of onion, tomato and lemon wedge inside. Drizzle with lemon juice and wrap the foil well so that there are no gaps. Place on a baking sheet and bake in an oven preheated to 200 ° C for 30 minutes. Put the finished fish on plates, sprinkle with chopped herbs.
Whole baked catfish with vegetables
Ingredients: – a small carcass of catfish; – 2 tomatoes; – a head of onion; – carrots; – 4 potatoes; – a sprig of rosemary; – 4 tbsp. tablespoons of olive oil; – lemon juice, salt and black pepper – to taste; – 1/3 bunch of parsley.
Prepare the catfish as described above. Season with salt and pepper. Sprinkle with rosemary, including inside. Place in the middle of a fireproof dish oiled with olive oil. Peel the potatoes, cut into large slices, salt and arrange around the catfish. Top with chopped onions, carrots and tomatoes. Season to taste. Drizzle with lemon juice and olive oil. Bake at 200 ° C until the potatoes are tender.
Catfish with mushrooms in white sauce
Ingredients: – catfish; – 200 g of mushrooms; – 1,5 tbsp. tablespoons of butter; – onion head; – 1 tbsp. a spoonful of flour; – 200 ml of cream; – 2 tbsp. tablespoons of sour cream; – salt and black pepper to taste.
Peel, gut and cut the fish into pieces, setting aside the head and tail for other dishes. Wash and dry each piece on a napkin. Rub with salt and black pepper. Place in a greased, high-sided, fireproof dish.
