Carrots, fennel and peppers baked with thyme
 

This is one of the simplest (and therefore favorite) side dish options for any dish. In general, vegetables can be any, and thyme can be replaced with any herbs or spices.

Ingredients:

  • carrots – 2 pcs .;
  • fennel – 1 pc.;
  • bell pepper – 1 pc.;
  • thyme – 4-5 branches;
  • red onion – 1 pc.;
  • extra virgin olive oil – 2 tbsp l .;
  • unrefined salt and freshly ground black pepper to taste.

Preparation

 

Preheat oven to 200 C.

Slice carrots lengthwise or leave whole if not too thick.

Cut the fennel, onion and pepper into small wedges.

Make a mixture of thyme leaves, olive oil, unrefined salt, and freshly ground black pepper.

Place vegetables in a baking dish and brush with this mixture.

Bake for about 40 minutes (time depends on the size of the vegetables and the density of the filling).
