  • blackcurrant – 2 kg;
  • water – 400 ml;
  • sugar – 2,5 kg.

It is necessary to perform a series of sequential actions:

  1. Sort fresh berries, remove debris, tear off the stalks.
  2. Wash the blackcurrant and dry a little, scattering a thin layer over the fabric.
  3. Boil water, add sugar.
  4. Wait for its complete dissolution and transparency of the liquid.
  5. Place the blackcurrant in a saucepan and pour over the syrup.
  6. Bring to a boil, turn off the heat and leave for 12 hours.
  7. Prepare a large baking sheet, on which pour a thin layer of granulated sugar.
  8. Carefully remove with a slotted spoon and put blackcurrant berries on it in one layer.
  9. Gradually, over six days, dry them in the oven without closing the door and turning it on for 2-3 hours a day.
  10. At the stage of full readiness, pour into a tightly closed glass container.
Important! Candied blackcurrants are stored together with syrup or separately from it.

To give the original taste to the syrup, add the zest of lemons or oranges.

The recipe can be slightly modified:

  1. Pure berries are immediately laid out in one layer on a baking sheet.
  2. Sprinkle them with sugar (200 g per 1 kg of blackcurrant).
  3. Preheat the oven to 200 ⁰С and place future candied fruits there.
  4. Withstand about 20 minutes, making sure that they do not burn, but warm up evenly.
  5. When ready, pour them into foil and dry.
  6. Add any nuts.
  7. Store in a clean glass container with a tight-fitting lid.

Candied red currants

For the preparation of candied red currants, it is worth choosing varieties with a high dry matter content and a minimum number of seeds.

First, sugar syrup is boiled. To do this, pour one glass of water into the pan, dissolve 1,5 kg of sugar, boil until completely transparent (about 10 minutes).

The procedure for preparing candied fruits is as follows:

  1. Fresh berries are washed in cold water, thrown into a colander.
  2. Pour them into a saucepan with syrup, boil for 5 minutes.
  3. Leave for 10 hours.
  4. Put it back on the stove and boil for 20 minutes.
  5. The boiling mass is removed from the fire and filtered.
  6. Leave for two hours so that the syrup completely drains and the currant berries cool.
  7. Sprinkle a tray or dish with powdered sugar.
  8. Cooled candied fruits are laid out on it in slides of 10-15 pieces.
  9. Keep in this state at room temperature for a week or in the oven – 3 hours at 45 ⁰С.
  10. Balls are rolled from the dried berries, rolled in sugar and dried again in the oven at a temperature of 45 ⁰С for 3 hours.
Important! Quality candied fruits should not be wet and stick together easily.

To determine the readiness, you need to squeeze the ball with your fingers. It should be elastic and not secrete juice. So that the cooked product does not dry out, it is packaged in glass jars with tight lids, where it is stored.

Important! Candied fruits are too hard if they are overexposed in syrup.

The use of a dryer for the preparation of candied fruits makes it possible to simplify the process and prevent burning.

  2. Pour blackcurrants with granulated sugar, taking the ingredients in a 1: 1 ratio.
  3. Leave overnight or 8 hours for the juice to stand out.
  4. Boil for 5 min. and again leave for 8 hours.
  5. Drain in a colander and let all the juice drain.
  6. Place on dryer trays for 10-12 hours.
  7. Arrange the finished product in clean glass jars.
