California Common (California Common)

A fruity (aroma) malt beer based on American hops. Anchor Steam from the 1970s is taken as a model, but this is not a rigid standard. The style originated in the Western United States during the Gold Rush, coolships were used in the manufacture – flat vessels for cooling the wort.

A wide variety of notes are felt in a rich bouquet: fruity, woody, minty, malt manifests itself with caramel and toasty tones. The color is unsaturated, transparent, the foam is resistant, creamy.

Citrus hops are not allowed in production, traditional American hops are preferred. Requires pale ale malt, lager yeast. Fermentation takes place at elevated temperatures. The drink is slightly similar to Australian sparkling ale, but not as carbonated, attenuated and fruity.

Density: initial 1.048-1.054, final 1.011-1.014

Bitterness Index: 30-45 IBU.

Color: 10-14 SRM.
