An easy way to make biscuit cakes

Sponge cakes are very popular among young and adult sweet tooths. Although biscuit dough is capricious, knowing and following simple rules, you can make an excellent cake.

To bake biscuit cakes, you will need:

– 5 eggs; – ¾ glasses of granulated sugar; – ¾ glasses of flour; – vanillin.

Separate the whites from the yolks. Do this carefully, if even a drop of yolk gets into the whites, they will not beat up. In addition, biscuit cakes should be made with well-chilled eggs. Beat them with a whisk, mixer, or blender until the egg whites are 3-4 times the size.

Then, without ceasing to beat the mass, begin to gradually add granulated sugar. When you get a cool foam, put the yolks in it, without ceasing to beat, add vanillin and flour. Mix the flour with the egg mass very carefully so that there are no lumps and proteins do not settle.

Heat a baking dish in a hot oven, then grease it with oil and line the bottom with parchment. After that, pour the biscuit mass into the mold and place in the oven. Bake the biscuit for 35–45 minutes at a temperature of 200–220 ° С. To make the biscuit dough fluffy and not shrink, do not open the oven door during the first 15–20 minutes of baking.

Determine the readiness of the biscuit by the color of the crust (it should be rosy) and by the elasticity of the dough – when you lightly press your finger, the dimple on the biscuit immediately disappears.
