Classics are always in fashion
Hostesses, long before the holiday, begin to puzzle themselves over how to build a scenario for the celebration and what dishes to surprise guests with. Of course, the main element of the treat is a beautiful tasty cake, preferably made by hand. Perhaps this part of the festive feast is the most traditional and you shouldn’t modernize the recipes so much. There is nothing better than the beloved classics: the dough prepared according to the universal classic recipes will satisfy the majority of guests. To make a big birthday cake, you do not have to tinker for several days in the kitchen. It is enough just to bake airy biscuit cakes.
For a small sponge cake, you will need: – 4 eggs; – 100 g of flour; – 1 glass of granulated sugar; – 1 teaspoon of vanilla sugar.
Carefully separate the whites from the yolks, keeping them in separate cups; you will need both parts of the egg. Add half a glass of sugar to the yolks and rub the mixture well with a whisk until smooth. It is desirable that the sugar dissolves in the eggs.
Beat the whites with a mixer, gradually increasing the rotation speed to maximum. When the whites begin to thicken and whisk them all the time, add the remaining sugar. The mixture will be ready only when it acquires the consistency of a thick cream. If you’ve done everything correctly, the whipped egg whites won’t leak out of the bowl when tilted.
Separate 1/3 from the whipped whites and add it to the yolks; mix thoroughly. Pour well-sifted flour into the resulting mass and mix until a homogeneous mixture is obtained. Now add the remaining proteins to the dough, stirring the mixture from top to bottom, i.e. alternately raising and lowering the spoon. Working in layers, prepare the dough.
Add cinnamon, cardamom, lemon zest, or other flavorings to the dough as needed. But do not overdo it with stirring: natural air bubbles should remain in the dough.
Put the finished dough in a greased form so that at least 1/3 of it remains free: when cooking, the dough will rise noticeably.
