Cabbage salad with cucumber: vitamin duet. Video
After a long winter, during a period of lack of vitamins, and just in the season, vitamin salads are unusually in demand. They do not require a large amount of food, do not take a lot of time from the hostess, but they are an excellent addition to the main dish and saturate the body with useful substances. One of the simplest is coleslaw. It is especially good when the first fresh cucumbers appear on the shelves, which complement winter vegetables well.
Cabbage and cucumbers: simple and tasty
There are countless recipes for vitamin salad from fresh cabbage, each housewife has her own. But there is one, basic, on the basis of which simple home masterpieces are created. For the salad you will need: – fresh white cabbage – 500 g; – fresh cucumbers – 2-3 pcs.; – vegetable oil – 3 tablespoons; – salt and herbs – to taste; – black pepper, vinegar 9%.
Remove the top tough leaves from the cabbage and rinse the cabbage thoroughly. Finely chop the cabbage with a sharp knife, excluding the stump area. If the head is large, it will be more convenient to cut it in half first. You can use a grater for Korean carrots: this way you can easily and relatively quickly cut all the cabbage without injuring your hands.
Put everything in a salad bowl, add a little salt, vinegar and remember the cabbage with your hands so that it juices and softens. Wash cucumbers and herbs well. Also grate cucumbers or cut into thin strips. Chop the greens finely. Mix vegetables, add vegetable oil and salt to taste.
You can take olive oil, refined or fragrant sunflower oil, but it is better to mix several types to set off the taste of the salad. White cabbage can be replaced with Peking cabbage. In this case, it is not necessary to accept it, the dish will turn out to be tender anyway.

What else can you add to a vitamin salad?
This salad is the perfect base for many variations. Top it off with finely chopped onion or bell peppers. Fans of spicy foods will love chopped garlic or exotic chili peppers. In this case, be sure to remove the seeds from the pepper to prevent the salad from getting too spicy.
You can diversify the dish with canned green peas or corn. If you are planning a more hearty meal for dinner, season it with mayonnaise or sour cream. The French dressing is also good: thoroughly mix vegetable oil, lemon juice, mustard and soy sauce, pour over the salad.
For a delicate sweet taste, you can add grated red apples or carrots. In the spring, cranberries will be a good addition. In this case, no additional acid should be added.
To soften the winter cabbage, scald the leaves with boiling water before chopping.
