Buckwheat tincture is remembered for its buckwheat aroma and mild taste. Budget version of the original drink for lovers of this porridge. There are several nuances in the cooking technology that you need to know about – just throwing cereal into alcohol will not work.
As an alcohol base, vodka, diluted ethyl alcohol, as well as double-distilled sugar or grain moonshine are suitable. It is not advisable to use aged alcohol (cognac or whiskey), since the aging tones will drown out the buckwheat.
Buckwheat tincture recipe
Ingredients:
- buckwheat (groats) – 50 g;
- vodka (alcohol 40-45%, moonshine) – 0,5 l;
- allspice – 2 peas;
- nutmeg – on the tip of a knife;
- honey (preferably buckwheat) – 1-1,5 teaspoons.
Pepper and nutmeg add flavor and aroma, but are optional. It is advisable to take buckwheat honey, the amount depends on personal preferences, the finished drink can be further sweetened after aging. Theoretically, instead of honey, sugar is suitable, but the tincture will significantly lose its taste.
Technology of preparation
1. Put buckwheat on a clean, dry frying pan in one layer. Fry for a couple of minutes over medium heat, stirring occasionally, until a characteristic aroma appears.
Attention! It is important not to overcook, so that the buckwheat does not start to burst like popcorn, otherwise an unpleasant bitter aftertaste of burnt porridge will appear in the tincture.
2. Remove buckwheat from heat, add allspice and nutmeg, mix, then transfer the mixture to a glass jar for infusion.
3. Add honey, pour in the alcohol base (moonshine, vodka or alcohol). Stir until honey dissolves.
4. Close the jar tightly, leave for 15 days in a dark room at room temperature. Shake every 2-3 days.
5. Strain the finished buckwheat tincture through 2 layers of gauze. Taste and sweeten with honey if desired.
6. Pour the drink into a storage bottle. Close tightly, leave in the refrigerator or cellar for 10-14 days to stabilize the taste.
If the tincture is cloudy (depending on honey), filter through cotton wool. Filtration improves the appearance but does not affect the taste.
