Boil noodles and shrimp separately until tender. Pour soy sauce into a heated pan, add asparagus, if desired, you can add more vegetables, salt and pepper to taste. Add peeled shrimp and noodles to vegetables.

“Soba with chicken and vegetables” – for cooking, take one large and fleshy bell pepper, one large white onion, one bunch of green asparagus, one hundred grams of fresh soy sprouts, half a teaspoon of pickled ginger, four hundred grams of chicken fillet, four servings of buckwheat noodles. The noodles are cooked as standard, discarded in a colander and left to dry. Heat the pan, add soy sauce, a little water and all finely chopped vegetables, simmer until cooked. Separately fry the fillet pieces. Combine stewed vegetables with meat, add noodles. Soba with vegetables and chicken should be juicy and hot when served.

“Chinese buckwheat noodle soup with seafood” – for cooking, you need to take equal portions (one hundred grams) of shrimp, mussels, smoked eel, half a teaspoon of pickled ginger, four sheets of seaweed (for sushi), one serving of noodles, if desired use the prepared base for miso soup. The base is prepared according to the instructions on the package. Add soba to the prepared base and cook for at least three minutes, add all seafood (except eel) and cook until fully cooked. Crush the seaweed leaves and add them to the soup, season with ginger, pepper and salt to taste. Before serving, decorate the soup with smoked eel.

“Soba with beef and teriyaki sauce” – for four servings of soba you need to take half a kilogram of beef, a large red onion, teriyaki sauce, one large and meaty bell pepper, soy sauce to taste, use fresh cucumber for decoration. The noodles are prepared as standard, discarded in a colander and left to dry. The meat should be thinly cut into long strips, marinated in teriyaki sauce for twenty minutes. Chop pepper and onion into strips. Fry vegetables in a pan with sesame oil, add beef to vegetables, add water and soy sauce, simmer until cooked. Add noodles to vegetables and meat, warm a little. The dish is served hot with small strips of fresh cucumber.

“Soba with vegetables”. Step-by-step recipe – for cooking you will need one package of noodles, half a kilogram of minced meat, four small tomatoes, two small bell peppers (preferably multi-colored), parsley, one onion, two large cloves of garlic, olive oil, a pinch of oregano, pepper and salt to taste. The noodles are cooked according to the instructions. All vegetables are finely cut into strips and sautéed in olive oil. Add fried vegetables, pre-fried minced meat with spices to a wok with buckwheat noodles. Sprinkle with parsley before serving.
