Broccoli Dishes (Part 2)

We have already talked about broccoli earlier and looked at the recipes for its preparation. But this is such a healthy product, from which many different dishes can be prepared. Therefore, we continue the topic of cooking broccoli and prepare a few more recipes.

 

So, remember that broccoli is one of the closest relatives of cauliflower; inflorescences are used for food, which have a bright, rich green color.

Italians were the first to eat broccoli, but it gained popularity all over the world only in the 20th century.

 

Broccoli is a real treasure of useful substances: vitamins C, B, E, K, PP, potassium, phosphorus, calcium, iron, zinc. In addition, scientists have found an anti-cancer enzyme in broccoli that reduces the risk of this terrible disease.

Broccoli is recommended for everyone, without exception. It raises weakened people to their feet, is useful for children and pregnant women, and reduces the risk of atherosclerosis.

The main way to cook broccoli is to boil it in water or blanch it, and you only need to cook broccoli for a few minutes, this is enough for the stems to become soft and lose their beneficial properties.

Broccoli can be eaten raw and added to salads. Very tasty soups are made from this vegetable, as well as delicious fillings for pies are obtained from it.

Pasta and broccoli salad

 

Delicious salad, a great option for a summer table, as it is hearty and light at the same time.

Ingredients:

  • Broccoli – 1 head of cabbage
  • Short pasta – 150 gr.
  • Artichoke in oil – 3 pcs.
  • Sweet pepper – 1 pc.
  • Red onion – 1/2 pc.
  • Pine nuts – 1 handful
  • Olive oil
  • Salt – to taste
  • Pepper to taste
  • Hard cheese

Boil pasta in salted water.

 

Boil broccoli, having previously disassembled into inflorescences. Cut onion into half rings, pepper into thin slices. Fry onions and peppers in oil, adding nuts and broccoli to them.

Cut artichokes into quarters. Grate the cheese. Mix pasta with fried vegetables and artichokes. Sprinkle with grated cheese.

Salad ready. Bon Appetit.

 

Broccoli soup with three onions

Ingredients:

  • Broccoli – 1/3 head of cabbage
  • Leeks – 1 pc.
  • Shallots – 1 pc.
  • Green onions – 1 stalk
  • Boiled potatoes – 3 pcs.
  • Sour cream – for dressing
  • Garlic – 2 cloves
  • Salt to taste
  • Vegetable broth – 500 ml.
  • Olive oil – 2 Art. l
  • Butter – 1 tsp

Cut all three types of onion into thin rings. Chop the garlic. Put butter and vegetable oil in a saucepan, melt and fry the onion until it becomes transparent.

 

Disassemble the broccoli into small inflorescences.

Place broccoli in a saucepan with onions. Add hot vegetable broth there. Cook the soup for about 10 minutes, until the broccoli and asparagus are cooked through.

When the soup is ready, add the chopped boiled potatoes and serve with sour cream.

 

Broccoli pancakes

This dish can be compared to pancakes or zucchini pancakes, the principle of preparation is the same, but the taste is….

Ingredients:

  • Broccoli – 400 gr.
  • Egg – 2 pcs.
  • Flour – 100 gr.
  • Cream – 100 ml.
  • Salt – to taste
  • Pepper to taste
  • Garlic – 1 clove
  • Sour cream – for dressing
  • Vegetable oil – for frying

Disassemble the broccoli into inflorescences and boil in salted water. Grind in a blender.

Add eggs, flour, chopped garlic, salt and pepper. To stir thoroughly.

We spread the resulting mass in a preheated pan with a spoon and fry on both sides.

Serve with sour cream.

Vegetable stew

This dish takes just a few minutes to prepare.

Ingredients:

  • Potatoes – 3-4 pcs.
  • Broccoli – 1 head of cabbage
  • Sweet peppers – 1-2 pcs.
  • Bay leaf – 2-3 pcs.
  • Luk – 1 No.
  • Salt – to taste
  • Spices – to taste

Boil potatoes in salted water with bay leaves. 5 minutes before the potatoes are ready, add broccoli inflorescences to it. After the vegetables are cooked, drain off the water.

Fry onions and bell peppers in a little oil. Season with aromatic spices, add boiled potatoes and broccoli and simmer a little.

Delicious and aromatic stew is ready.

Pasta with broccoli and cauliflower

Ingredients:

  • Long pasta – 250 gr.
  • Broccoli – 200 gr.
  • cauliflower – 200 gr.
  • Garlic – 1 clove
  • Vegetable oil
  • Salt – to taste
  • Pepper to taste
  • Hard cheese – 100 gr.
  • Cream – 3 tbsp. l.

Boil the pasta in salted water until tender.

Fry the garlic in a preheated pan and add broccoli and cauliflower, disassembled into inflorescences, to it. Add a little water and simmer until tender.

A few minutes before the cabbage is ready, add cream, salt, pepper and spices.

Grate the cheese.

Place the creamy vegetables on top of the pasta and sprinkle with grated cheese on top.
