The most delicious breakfast in my life is very easy to remember – it was many years ago when I first went abroad. And not just abroad, but in Paris, the dream city. Of course, the first thing I did was what every tourist in France probably does: I went to the nearest cafe with round wooden tables and red walls. It was like in a movie: freshly baked crispy croissants, strawberry confiture, fragrant coffee. And the real Frenchmen in carelessly tied scarves were having breakfast around. Then for the first time I realized that breakfast can be not just a quick morning snack, but a whole ritual. Each country has its own unique details, and you can learn a lot about its inhabitants from the way breakfast is served in a particular city of the world. For example, the French look through the morning newspaper while sitting at a table and slowly drinking coffee. Italians prefer to have breakfast standing up in small bars where they order cappuccinos and brioches, breaking through the crowd of loudly chatting customers. Known for their fondness for oatmeal, the British most often eat huge bacon and eggs or delicious maple syrup waffles for breakfast. Well, Americans who are always in a hurry just buy coffee in a plastic cup and a sandwich on their way to work … There is nothing more interesting than watching the city wake up, and with it its inhabitants. The breakfast culture is actively coming to our country: numerous cafes are opening, where they offer almost the same croissants as those that once amazed me in Paris! Don’t they inspire you to make the most of your morning menu at home? And the lack of time cannot be an excuse, because the morning is the beginning of the whole day. So, it is worth paying the most serious attention to it and getting maximum pleasure from it.

Rolls with soft cheese and smoked salmon

For 2 persons

Prepare: 10 minutes

Preparation: 15 minutes

  • 5 eggs
  • 4 cherry tomatoes
  • 100 g Philadelphia cheese
  • 100 g smoked salmon
  • 2 Art. l. olive oil
  • oil for frying
  • a few sprigs of lettuce
  • sprig of basil
  • salt and pepper

Preparation

Whisk the eggs with salt and pepper and fry a very thin, soft omelet the size of a frying pan. Remove from heat and place cheese, salmon slices, basil leaves and tomato halves on the edge of the omelet. Roll up the roll, then cut it in half diagonally. Place on a plate, garnish with lettuce florets and drizzle with olive oil.

Tartlets with ricotta and tomatoes

For 4 persons

Prepare: 15 minutes

Preparation: 40 minutes

  • 500 g puff pastry
  • 600 g ricotta cheese
  • 50 g of grated Parmesan cheese
  • 1 egg
  • 4 cherry tomatoes
  • 5 Art. l. olive oil
  • a few sprigs of parsley, dill and thyme
  • salt and pepper

Preparation

Roll out the finished dough to a thickness of 0,3-0,5 cm, divide it into two equal halves. Cut into squares with a side length of 7 cm; brush half of them with egg. From the remaining squares, remove the middle so that the edges are about 1 cm wide, and carefully place them on top of the first squares. Brush the top with egg and bake in an oven preheated to 180 .C for 20-25 minutes.

For filling

Mix ricotta with finely grated parmesan, season with olive oil, finely chopped parsley and dill, salt and pepper. Put the filling into tartlets, put 2 tomato halves on each and bake in the oven at 180 .C for 5 minutes. Arrange on plates, drizzle with olive oil and garnish with a sprig of thyme.
