Making wheat bread with dried fruits at home requires certain skills and knowledge. If you know how to work with yeast dough, it will be somewhat easier, but in any case, it’s worth a try. For cooking, you will need the following ingredients: four hundred grams and one glass of premium wheat flour (preferably whole grain), twenty grams of pressed yeast, one teaspoon and 1/4 cup of powdered sugar, one third of a teaspoon of salt, two hundred and fifty milliliters of water.

For the filling, you will need two hundred grams of light pitted raisins, one hundred grams of dried apricots, fifty grams of candied oranges, one hundred and fifty milliliters of orange juice, one hundred grams of walnuts, one hundred grams of prunes, cloves, nutmeg, cinnamon, almonds and candied fruits for decoration.

Step-by-step cooking recipe: chop nuts, dried apricots and prunes, wash, dry and chop into even cubes. Pour boiling water over raisins for three minutes, drain and dry. Cut candied fruits into small cubes. All chopped fruits should be put in one container, mixed and add orange juice and a spoonful of cognac to them (optional). Leave to infuse for 12 hours, then drain the liquid and leave in a colander for another twenty minutes.

Dissolve the yeast in water heated to forty degrees, add a spoonful of sugar, leave the dough for ten minutes until bubbles appear on the surface of the mass. Add four hundred grams of flour, salt, spices and the remaining granulated sugar. Knead the dough thoroughly, cover with a cloth and leave to rise in a warm place (approximately leave for an hour and a half). Take a fifth of the total dough, set aside. Roll out the rest, sprinkle with dried fruits and knead with the gradual addition of flour (dried fruits are juicy). We roll out the fifth part of the dough, put a ball of dough with dried fruits in the middle, form a ball, carefully transfer it to the prepared baking sheet, cover with a cloth and leave to rise for at least another forty minutes.

Before you put the bread in the oven, its surface must be greased with egg yolk and sprinkled with almond flakes and candied fruit. Cover the bread with foil and put in an oven preheated to one hundred and eighty degrees. In the oven, bread should be baked for twenty-five minutes, after which you need to lower the temperature to 160 degrees and bake for another hour and a half. Remove foil and bake until golden brown. After baking, grease the bread with a small piece of butter and place in parchment. Now an important point: before serving the product on the table, it must be kept for at least two weeks at a temperature of eight degrees.

Rye bread with dried fruits

To prepare rye bread with dried fruits in a bread machine, you will need whole wheat flour – 375 g, wholemeal or peeled rye flour – 125 g, pressed yeast – 10 g, warm water – 350 ml, salt – 10 g. The first step is to prepare dried fruits. Scald prunes and dried apricots with boiling water, dry and chop into cubes.

Preparing the dough: sift two types of flour, mix. Dissolve yeast in warm water in a separate container. We combine the yeast mass with flour, add salt. Knead the dough. Add dried fruits and, if desired, whole hazelnut kernels. Leave the dough to rise in a warm place for an hour. We form two loaves from the approached dough, put it on a baking sheet. Lightly sprinkle the top of each loaf with flour and leave to rise for another half hour. Place the bread in the bread maker (baking mode at 250 degrees). Ready bread should cool completely. Enjoy your meal.

Black bread with dried fruits

To prepare black bread with dried fruits, you will need four tablespoons of rye malt, two teaspoons of ground coriander, one teaspoon of cumin, sixty grams of rye flour, two hundred and sixty grams of ninety-degree boiling water. Mix all the ingredients, and leave for a couple of hours until the mixture gradually cools down – this is a sourdough.

For the test, you need four hundred grams of rye sourdough, four hundred grams of peeled rye flour, three hundred and forty grams of whole grain wheat flour, sixteen grams of salt, sixty grams of honey or molasses, three hundred and forty grams of water. Knead the bread dough by hand. Leave the adze to stand for three to four hours. Divide the resulting dough into two equal parts, add dried fruits and nuts. Place in bread machine, leave to rise for an hour. Set the bread maker to the desired setting and bake until done. As a filling, you can use dried cranberries, dried apricots, walnuts; prunes, dates, cashews, almonds and hazelnuts; dried apricots, prunes, raisins and hazelnuts; raisins and sunflower seeds; figs, prunes, salted pistachios.
