Ukrainian borscht with donuts is a true national dish adored by many peoples from other countries. Its main ingredient is beets, which give borscht its unique taste and color.
Most often, Ukrainian borsch is prepared on meat and bone or bone broth, but mushroom broth or chicken broth is also suitable as a base. Borscht owes its delicious taste to almost twenty products that make up its composition.
So how to cook a real Ukrainian borscht with donuts so that its taste fully matches the taste of borscht that our grandmothers still cooked, and not overdo it with donuts?
Recipe for Ukrainian borscht with donuts
So, to prepare a liter of dish, you need 1 kg of beef, 500 grams of potatoes, 400 grams of beets, 300 grams of fresh cabbage, 200 grams of carrots, 200 grams of onions, 3 tablespoons of tomato paste, 1 teaspoon of 6% vinegar, 2 –3 cloves of garlic, the same amount of bay leaves, pepper, salt, herbs, vegetable oil.
Now you can start the process itself. First, boil the meat and remove it from the pan, leaving only one broth. Now prepare the frying for dressing the borscht – chop the onion finely, grate the carrots and beets, you can also add the parsnip root. Preheat a frying pan, pour sunflower oil over it and send chopped onions, grated carrots, beets, tomato paste and, at the very end, parsnips.
Add vegetables as they turn golden, stirring one ingredient, and only then sending the next to the pan – this way your dressing will be completely fried.
Simmer the roast slowly for 15-20 minutes, stirring occasionally. At this time, potatoes should be boiled in the meat broth, which, after being ready, should be sent to the frying pan. Crush it and put it back in the broth, boiling the latter well.
Then chop the cabbage, cut the bell pepper into half rings and add parsley, dill and cabbage to the broth. After three minutes, put the bell pepper, bay leaf and dill with parsley in the same place.
Turn off the pan, cover loosely and let the borscht brew.
We prepare donuts for borscht
For 20 donuts, you will need 300 grams of flour, ¾ glass of warm water, 1 tablespoon of sugar, ½ bag of dry yeast and 2 tablespoons of sunflower oil.
Remember that the main rule of the Ukrainian borscht recipe is not to overdo it with donuts!
Dissolve the yeast in warm water, adding sugar and a little flour. After the mixture is fermented, stir in the rest of the flour, add butter and knead the dough. Cover the dough with plastic wrap and leave to infuse in a warm place.
Knead the present dough, roll it into balls-donuts and put them on a greased baking sheet. After 20 minutes, send the donuts into the oven, preheated to 180 degrees, and wait for a golden brown crust to appear. Ready-made donuts can be grated with garlic.
