Bolognese sauce: a noble classic. Video
Bolognese is an Italian sauce served with spaghetti, pasta and lasagna. It allows you to make such dishes much more juicy and aromatic, as well as satisfying, because this sauce is prepared on the basis of minced meat.
Selection and preparation for a bolognese sauce recipe
There are dozens of different bolognese recipes, but most of them are just variations of the classic sauce. If you want to make a traditional Italian addition to spaghetti, lasagne or pasta, use the following ingredients:
– 400 g of ground beef or pork without additives; – 100 ml of dry wine; – 5 medium sized tomatoes; – 3 pods of green sweet pepper; – 1 onion; – 150 ml of cream; – 8 cloves of garlic; – fresh basil and mint to taste; – salt; – olive oil.
The wine can be either white or red, depending on your preference.
Pour olive oil into a skillet and add minced meat and salt. While it is sautéing over low heat, chop the garlic and onion finely, then place in the skillet and stir. Now you need to cut the bell pepper into small strips and, after waiting 3-4 minutes, add it to the minced meat. After another 5 minutes, put the grated tomatoes into the pan.
It is very important to knead the minced meat thoroughly so that it does not collect into lumps. The bolognese sauce should be almost uniform
When the vegetables are tender and the minced meat is fried, add chopped herbs to the pan to taste.
How to make bolognese sauce
When all the ingredients are ready, you can start making the sauce. Pour the cream into the skillet and mix thoroughly. Simmer the resulting mixture over low heat for 5-7 minutes, stirring occasionally, and then pour in the wine and stir the whole mass again. Place the lid on the skillet and simmer the bolognese sauce for two hours over very low heat. Please note that professional chefs simmer the dish for 4 hours, but this time can be halved. This will be enough to make a flavorful sauce. Prepare spaghetti, pasta, or lasagna half an hour before the addition is ready.
After cooking, the bolognese may feel thicker than you would like it to be. In this case, it is recommended to add a little hot water to it, in which the spaghetti was cooked. But don’t overdo it: the bolognese is not supposed to be too runny.
When serving the dish, it is recommended to sprinkle the sauce with a little grated Parmesan cheese. This will give the food a more sophisticated, unusual and pleasant taste.
Pay attention to another important point: the bolognese should be served hot immediately after preparation. Experienced cooks do not recommend keeping it in the refrigerator for longer than 2-3 days, and even more so putting it in the freezer for long-term storage.
