Boiled condensed milk at home. Video recipe
You probably ate boiled condensed milk as a child and still remember those magical moments. Unfortunately, today in stores it is difficult to find the very delicacy that would have a familiar delicate taste. In addition, purchased products have a high percentage of vegetable fat and all kinds of harmful additives. So make boiled condensed milk with your own hands, because it’s not difficult at all.
A simple recipe for boiled condensed milk
Ingredients: – 1 liter of milk; – 500 g of granulated sugar.
For homemade condensed milk, it is better to take homemade or, in extreme cases, store-bought whole milk from 3,5 to 6% fat
Pour the milk into a heavy-bottomed saucepan or copper bowl, add sugar and stir. Bring to a boil over high heat. Reduce the temperature to low and evaporate the sweet milk mixture for 2–2,5 hours until thick, stirring frequently with a spoon or spatula. Transfer it to a clean, dry glass container with a screw cap and close. Fill a metal bowl with warm water, place over medium heat, and immerse the filled jar in the liquid to mid-height. Cook the boiled condensed milk for 2–2,5 hours until chocolate brown.
Boiled condensed milk at home: recipe number 2
Ingredients: – 1 liter of 25-30% cream; – 400 g of powdered milk; – 200 g of infant formula or another 200 g of powdered milk; – 1,2 kg of granulated sugar.
Pour sugar into a saucepan, pour 100 ml of water over it, stir and heat, but do not boil. It is not necessary to wait for the grains to completely dissolve, just bring the syrup to a more or less homogeneous liquid mass and set aside. Build a steam bath from two pots of different diameters, which can be stacked on top of each other so that the bottom of the smaller one does not submerge in the water constantly heating in the larger (lower) pan over medium heat. Combine cream and sugar slurry in the upper “tier”, then add milk powder and baby food.
The range of proposed baking time of condensed milk in the oven is as much as 1,5 hours, since, depending on preferences, you can subject it to varying degrees of caramelization from light brown to chocolate
Stir the mixture constantly for the first 15 minutes, avoiding the formation of lumps, use a mixer if necessary. Next, cook ordinary condensed milk for at least 1 hour, stirring every 10 minutes for 5 minutes. Make it boiled using the method described in the previous recipe, or use the method of cooking it in the oven. To do this, preheat the oven to 200 degrees. Pour the condensed milk into an ovenproof dish. Insert it into the same larger dish or a deep baking sheet, half full with water. Cover the condensed milk with a sheet of foil, wrap it tightly over the sides. Send the entire structure to the oven for 1,5–3 hours. Add water periodically to the lower level as it boils away.
