The blue shark is not just an exotic delicacy, the meat of this dangerous predator is extremely healthy and tasty. The variety of dishes that can be prepared from the blue shark is amazing: these are the famous Asian fin soups, and quick grilled steaks, and complex salads, and much more. Shark meat is tender and low-fat, it contains a lot of trace elements and amino acids, as well as vitamins of groups A and B.
Getting a blue shark today is no longer as difficult as it used to be; now it can be found in almost any large supermarket. It should be remembered that sometimes blue shark meat is sold under the guise of “rock salmon” or “conger eel”, and sometimes – “Folkston beef”. Regardless of which dish you are preparing, first defrost the meat completely, then drain all the water.
Shark fin soup is rightfully considered a masterpiece of Asian cuisine (the most valuable of the fins is the dorsal one). There is no single correct recipe for this soup, each chef prepares this dish in his own way. However, the general principle is simple: the fins are separated into the finest strings, which give the soup an exquisite taste.
You will need: – 4 fins (sold dried); – 300 g of pork tenderloin; – 200 g of chicken; – 200 g of crab meat; – 2 onions; – dried barberry; – 1 large ginger root; – green onions, salt, pepper to taste.
Before you start cooking, you need to soak the fins in water acidified with lemon for XNUMX hours. The water needs to be changed frequently. Immediately before cooking the shark, boil the chicken and pork broth with the addition of onions and barberry. When the broth is ready, all the ingredients, including the onion, must be removed.
While the broth is infused, the fins and ginger should be placed in cold, clean water. The fins are boiled for at least 10 hours, after which they must be removed and disassembled into thin strings. These strings should be put in meat broth and cooked for another 15 minutes. Add crab meat 2-4 minutes before the end. Garnish with green onions before serving.
Gourmets claim that fin soup is most delicious on the second day, when it hardens and turns into a kind of jelly.
No less common is the blue shark steak recipe. Cooking steak is less energy intensive and takes much less time compared to fin soup. You will need: – 1 blue shark fillet, – dry white wine, – juice of 1 lemon, – 1 tbsp. honey, – salt, white and black pepper to taste.
Shark meat itself is quite salty, so it is highly advisable to do without salt when cooking
Fillet should be cut into small pieces no more than 1,5 cm thick, pour over with wine, add black pepper there and squeeze lemon. Shark meat should be soaked in this mixture for at least 10 hours. After removing the fillets from such a bath, squeeze, coat with honey and place in a frying pan with olive oil. Don’t forget to add white pepper. You need to fry the fillets for a few minutes, and then put on a baking sheet covered with foil and send to the oven for 15–20 minutes. The steak is ready.
