Mashed potatoes with nutmeg
This recipe is simple to prepare and at the same time original – nutmeg is able to give an exquisite taste note even to ordinary potatoes.
You will need: – 1 kg of potatoes; – 1 tbsp. medium fat milk; – 200 g of butter; – 1 tsp. grated nutmeg; – 1 tsp. salt; – ground white pepper.
When buying potatoes, choose varieties designed for mashed potatoes – such tubers boil better and cook faster
Wash and peel the potatoes. Cut the tubers in half or quarters and place in a saucepan with cold water. Put the pot on fire, bring the water to a boil, and then simmer for 20-25 minutes. You can check the readiness of the potato by piercing it with a fork – it should be soft and crumbly. Drain and let the potatoes dry.
Fold the potatoes in a blender, add the diced butter there, and it should be as cold as possible – this will add splendor to the puree. Combine the butter and potatoes in a blender for a few minutes. Heat milk, add nutmeg to it. Pour half the milk into the puree, add salt and whisk again. Add some white pepper if desired. Repeat the operation with the remaining portion of milk. Serve the finished puree hot with fish, meat or fresh vegetable salad.
If you prefer a thinner or denser puree, change the amount of milk in the recipe. Lovers of low-calorie foods can reduce the amount of butter and dilute the milk with water.
You will need: – 500 g of carrots; – 3 medium oranges; – 40 g of oil; – 1/2 tbsp. medium fat milk; – 1 onion; – vegetable oil; – salt and freshly ground black pepper.
Wash the carrots, peel and cut into thin slices. Juice one orange. Fold the carrots into a skillet, pour over the juice and cook over medium heat for 20-30 minutes. Season with salt and pepper. Peel the onion and cut into small cubes. Heat vegetable oil in a small skillet and fry the onions in it for 4-5 minutes.
Put the finished carrots in a blender along with butter, juice of a second orange and milk. Turn the mixture into a smooth puree. Serve the carrot puree with pre-cooked fried onions and peeled wedges of a third orange. This dish will be an excellent side dish for fried duck leg or pork chop.
