Ripe blackthorn berries are great for making various alcoholic drinks. The most famous is “Sloe gin”, but in our area, liqueur and wine are often made from thorns.

Tips before starting

  1. If based on gin

    This drink does not forgive hack-work in choosing an alcohol base. And for its preparation it is important to use high-quality gin. Let it be not the most expensive, but be sure to be of high quality.

  2. Wild thorn

    A small thorny bush/short plum tree. Blackthorn fruits are rounded and resemble small black or dark blue plums. The pulp has a sweet and sour taste with a slight astringency, but after freezing, the fruits become sweeter.

    As for berries, it is advisable to use wild fruits, but if you do not have such an opportunity, you can take cultivated varieties of blackthorn.

  3. Experiment

    Each batch of homemade blackthorn alcohol can be unique, as there are no clear proportions that should be followed during the preparation process.

    Someone uses more berries and less sugar, lovers of spicy drinks add cinnamon, cloves or nutmeg. And someone completely refuses the sweetener and then the drink turns out to be strong, with a real masculine character.

Ingredients

  1. Wild blackthorn berries – 500 g

  2. Gin (preferably 43%) – 1 l

  3. Crystalline sugar – 250 g

Method of preparation

  1. Before proceeding with the preparation of the drink, it is necessary to wash and sort out the fruits of the blackthorn, getting rid of small debris and spoiled berries.

  2. Now it is advisable to pierce each berry with a toothpick in several places. If you use wild fruits, we recommend freezing them a little, then they will become sweeter.

  3. We transfer the prepared turn into a glass jar, add crystalline sugar and pour in alcohol. We insist about three months in a cool and dark room.

  4. It is very important for the first couple of weeks to shake the infusion daily so that the sugar is completely dissolved.

  5. After 3 months of infusion, the drink must be filtered and passed through the filter 3-4 times or more if sediment still remains after filtering. You can also pour the drink into a bottle, put it in a dark pantry, and after the sediment has completely settled, carefully drain the sloe gin.

  6. Next, we are waiting for many years of aging the drink. Ideally, this process is better to stretch for 6 years, but you can also start tasting after 12 months. But it should be remembered that in this case the drink will be slightly harsh.

Recipe for thorn infusion

Ingredients

  1. Gin – 4,5 l

  2. Blackthorn berries – 5 kg

  3. Sugar – 2,5 kg

Method of preparation

  1. Rinse the ripe sloe, let it dry well. Place in a large jar, sprinkling with sugar. Cover with gauze, keep in a sunny place for 40-45 days.

  2. Pour in 500 ml of gin, leave for 4 months and decant the liquid well.

  3. Stir in the remaining gin and bring the mixture to a boil once.

  4. Cool, pour into prepared dry bottles, cork carefully and put in a box.

  5. Fill the bottles with dry sand, store until use in a cool, dry place for 6 months.

Wine from the tern

Ingredients

  1. Blackthorn berries – 2,5 kg

  2. Sugar – up to 250 g / kg

  3. Water – 2,5 L

  4. Yeast – 1 tsp.

Method of preparation

  1. Rinse frozen or ripe fruits, put in a saucepan, pour boiling water and boil a little.

  2. After the mass has cooled, pour everything into a bottle, add yeast diluted in a small amount of water and approached yeast and part (about 1/3) of the previously prepared sugar syrup.

  3. Mix everything and close with a fermentation stopper.

  4. After a week, add the remaining 2/3 of the sugar syrup to the bottle, stir, close the cork again and leave to ferment for a month.

  5. After the end of fermentation (the fruits will sink to the bottom, and the release of carbon dioxide in the bubbles will stop), drain the liquid into another bottle and leave to ferment for another 1 week.

  6. Then filter the wine, bottle and cork.
