There are several recipes for making black chokeberry jam. It is important to choose simple cooking methods with the right ratio of ingredients. Over time, the number of components can be changed and prepare a sweet treat to your own taste.

To make blackberry jam delicious and not bitter, you must follow some rules for its preparation:

  1. For a sweet treat, choose well-ripened, uniformly black berries.
  2. To get rid of stiffness, the berries are poured over with boiling water and kept in it for several minutes.
  3. To get rid of the bitter taste of chokeberry, a large amount of sugar is put in the jam. A ratio of 1,5:1 is the minimum.
  4. To preserve the taste of fruits for the whole winter, they are clogged in jars.
  5. To improve the taste of black berry jam, apples or other fruits are added to it.

Classic black chokeberry jam for the winter

For the preparation of blackberry jam, according to the recipe, the simplest products are taken in a small amount. They are combined and boiled.

Ingredients:

  • blackberry – 1 kg;
  • sugar – 1,5 kg;
  • water – 2 cups.

Aronia berries are sorted before cooking, washed under running water, allowed to drain.

Next, berry jam is prepared as follows:

  1. The berries are transferred to the bowl of a food processor and crushed until smooth. You can grind the fruits manually through a sieve.

  2. Water is added to the chokeberry mass, the mixture is poured into a saucepan and put on the stove.
  3. Cook for 5-7 minutes.
  4. Sugar is added to the boiled berry, mixed. The sweet mixture is boiled over high heat for 5-7 minutes. After set aside, let it brew for about half an hour and boil for another 5 minutes over low heat.
Important! During the entire process of making jam, it is stirred with a wooden spatula. This will help prevent the sugar from settling and burning.

This delicacy is thick and tasty. Apples will not allow mountain ash bitterness to appear, but there will be a slight astringency in the taste.

For the preparation of jam from apples and black ashberries, the following ingredients are taken:

  • apples (Antonovka) – 2 kg;
  • blackberry – 0,5-0,7 kg;
  • granulated sugar – 1 kg.

To save the workpiece for the winter, prepare jars. They are well washed and sterilized over steam, as are the lids. Then start making jam.

Antonovka is washed, the stalks are removed and cut into several large pieces. The peel and seeds do not need to be removed. They contain pectin, which will make the jam jelly-like and homogeneous. This substance is also found in mountain ash, so the jam from it has a thick consistency.

Aronia berries are also cleaned of debris, sorted and washed under running water.

Next, jam is prepared as follows:

  1. Pour 1000 ml of water into a deep saucepan with a thick bottom. Apples and chokeberry fruits are added to the liquid.
  2. The fruit mixture is boiled for 15 minutes until the apples soften.
  3. After the mixture is allowed to cool slightly and rub it through a sieve to get a clean puree without pomace. It is injected with an equal weight portion of sugar.
  4. A glass of water is poured into a saucepan with a thick bottom, boiled, and the berry mass is spread on top. The fire is screwed and the sweet mixture is boiled for no more than half an hour, stirring.
Important! The readiness of apple jam from chokeberry is determined by density. Do not cook jam for more than 30 minutes.

As soon as the confiture becomes dense enough, it is distributed among jars and put away for storage: rolled up lids – in the pantry, nylon – in the refrigerator.

For this recipe, black berries and sugar are taken in a 1: 1 ratio. The fruits are washed under running water, thrown into a colander and allowed to drain.

Important! The liquid in the fruits of chokeberry should remain a minimum amount.

Only in this case will the jam be thick enough to be used as a pastry filling.

Preparation:

  1. Sugar and chokeberry are combined in a 1: 1 ratio. The pan is set aside for several hours – the berries should let the juice go.
  2. After 5 hours of languishing, the sweet berry mixture is put on the stove and simmered over low heat after boiling for 60 minutes. At the same time, the jam is constantly stirred to prevent burning.
  3. As soon as the jam thickens, it is removed from the stove and cooled. After the berries are ground with a blender.
  4. The chokeberry puree is put back into the pan and simmered over low heat until the juice has completely evaporated, about 15-20 minutes.

The finished jam is corked in sterilized jars or sent for storage in the refrigerator. The twists cool in the kitchen at room temperature, after which they can be transferred to the pantry or cellar.

Sweet desserts with a high sugar content keep well and last a long time. Blackberry jam for the winter, rolled up in jars and sterilized, can be put in the pantry and stored there from a year to 2. It is important that the temperature in the jam storage areas does not rise above + 12 ° C.

If blackberry jam is distributed in jars, but not sterilized, then such a product can be stored in the refrigerator for up to 6 months. Periodically, the jar must be opened and monitored so that a gray film does not form on the surface of the jam. It can be easily removed with a spoon. If there is enough sugar in the dessert, blackberry jam will not mold.
