Biscotti: Italian biscuits. Video

Biscotti is the famous Italian biscuit biscuit, vaguely reminiscent of aromatic crunchy croutons. Nuts are often put in cookies – almonds, pistachios, hazelnuts, raisins or dried cranberries, anise and cinnamon, lemon or orange peel.

For classic cookies you will need: – 125 grams of blanched almonds; – 125 grams of wheat flour; – 165 grams of powdered sugar; – 1 teaspoon of cinnamon; – ½ teaspoon of almonds.

In order to blanch the almonds, put them in a colander, put them in boiling water for 2 minutes, and then immediately transfer them to ice water.

Preheat oven to 160 degrees. Line a baking sheet with parchment paper. Combine almonds, 40 grams of caster sugar and flour in a bowl, season with cinnamon and nutmeg. Stir.

Put the remaining powdered sugar in a small saucepan and mix with 100 ml of water, simmer the sugar syrup, stirring constantly. Gradually pour the prepared hot syrup into a bowl with dry ingredients, stirring constantly. Once the mixture has cooled, shape it into a 4 cm wide sausage. Place it on a baking sheet and bake for 40 minutes. Cool slightly. If you wait until it cools completely, the crispy bars cannot be cut without breaking.

Cut the finished bar into 0,5 centimeter thick pieces and place them on a baking sheet. Bake the biscotti for another 15 minutes, turn over to the other side, and bake the same amount. Chill the biscotti completely before serving.

Another traditional biscotti recipe is associated with Christmas pastries. Take: – 350 grams of wheat flour; – 2 teaspoons of baking powder; – 2 teaspoons of a traditional spice mixture (ground cinnamon, cloves and allspice, nutmeg and cardamom); – 250 grams of powdered sugar; – 3 beaten chicken eggs; – zest of 1 orange; – 85 grams of fine golden raisins; – 85 grams of dried cherries; – 50 grams of peeled chopped almonds; – 50 grams of chopped pistachios.

Italian housewives begin to bake such crispy cookies a few weeks before the holiday, not only to serve it for the celebration, but also to present to friends and acquaintances for Christmas.

Preheat oven to 180 degrees. Line a baking sheet with parchment paper. Sift flour with salt, icing sugar, spices and baking powder. Add the beaten eggs and zest, knead the dough, place the raisins, cherries and nuts in it and stir.

Form 4 rolls 30 cm long, flatten slightly and place on a baking sheet. Bake for 25-30 minutes, until the dough is browned. Remove the baked goods from the oven and cool slightly. Cut diagonally into 1cm slices, place on a baking sheet and bake for another 15 minutes on each side.
