What remains unchanged is that even in this state, the beneficial properties of the vegetable are preserved. After all, in addition to its main function – cleansing, it has a rejuvenating effect on the body, stabilizes the digestive tract and even prolongs life!
Well, back to the gastronomic benefits of beets. The key is versatility. After all, it can be used not only as an ingredient in various salads, such as vinaigrette, but also as an independent dish or snack.
With onions and honey
You will need:
- beetroot;
- onion;
To prepare the marinade:
- apple cider vinegar – 100 ml;
- honey – 100g;
- salt – 15 g;
- favorite spices – to taste.
First, thoroughly wash the beets and peel them. Next, cut the vegetable in half, and then into thin plates. We proceed to the preparation of the brine. To do this, you need to combine the listed ingredients and mix them properly. Now pour the resulting mass into a container for beets and boil for about 5 minutes. Then transfer the vegetable to the jars, alternating with the onion rings. The remaining marinade is also sent to jars.
Let’s move on to sterilization. It should be remembered that 0,5 liter containers must be sterilized for 10 minutes, and 1 liter containers for at least 15 minutes.

Ingredients:
- horseradish root – 25 g;
- red beets – 2 kg;
- sugar – 100 g;
- water – 250 ml;
- citric acid – 20 g;
- salt – to taste.
Put the washed root crop on low heat and cook until fully cooked. After it cools down, peel off the skin and grind it on a grater. Horseradish root should be crushed to a mushy consistency. This will help you processing it through a meat grinder. Make a brine: dissolve a lemon in boiled water, add sugar and salt. Pour the vegetables with the resulting solution and distribute among the jars. In this case, 0,5 l of the container should be sterilized for 15 minutes, and 1 l for 25 minutes.
With plum
You will need:
- beets – 1,5 kg;
- plums – 1 kg;
- apple juice – 1,5 l;
- sugar – 1,5 Art .;
- salt – 1,5 tbsp. L.;
- cloves – 5 pcs.
Prepare the beetroot by pre-cooking, peeling and cutting it into slices. Wash the plums, separate from the stone. Fill the containers with layers of vegetables, alternating beetroot slices with plums. Don’t forget the cloves! Next, you need to prepare the marinade. Dilute sugar and salt in apple juice, boil. Distribute the resulting brine into jars and close them with lids. The seaming should be sterilized for at least 20 minutes.

Prepare:
- small beets – 1 kg;
- peppercorns – 5-10 pcs.;
- water – 2 l;
- salt – 30 g;
- granulated sugar – 40 g;

- onions – 1,5 kg;
- sweet pepper – 500 g;
- tomatoes – 1 kg;
- garlic – 150 g;
- beet fruits – 3,5 kg;
- carrots – 1 kg;
- acetic acid – 200 ml;
- salt – 150 g;
- sugar – 350
- greens – 300 g;
- sunflower oil – 370 ml;
First, prepare the tomatoes. They need to be thoroughly washed and ground to a mushy state with a blender. Finely chop your favorite greens, onion and garlic cloves, and grind the beets and carrots on a grater. Chop the pepper finely. In a large bowl, mix all the ingredients, carefully combining them into a homogeneous mass. Add salt, granulated sugar, oil and vinegar. The prepared mass should be marinated for 2 hours to highlight the beetroot juice. Salting dressings for beetroot and borscht will save you a significant amount of time in the future. - vegetable oil – 3 tbsp.;
- acetic acid – 4 tbsp. l .;
- salt – 3 tbsp l.
Grind the beets and carrots on a grater. Finely chop the onion, and process the tomatoes through a meat grinder. Transfer the prepared vegetables to a saucepan, pour with vinegar and oil. Cook on low heat for 50 minutes. Move the stewed vegetables into prepared jars, sterilize for 20 minutes.
With cabbage
You will need:
- cabbage – 3 kg;
- beets – 3 kg;
- garlic – 40 g;
- pepper – 1 tsp;
For brine:
- beetroot juice – 1 l;
- water – 3 l;
- salt – 80 g;
- sugar – 4 tsp;
- bay leaf – 5 pcs.
Process beet fruits through a juicer. The rest – cut into slices. Cut the cabbage into medium pieces. Put cabbage leaves on the bottom of the dish. Garlic, pressed through a press, combine with pepper. Grate the cabbage pieces with the resulting mass and put in a container. Send the beets there. Prepare the brine. Add beetroot juice to it, and then pour the mass into the cabbage with beetroot. From above, the container must be pressed down with something heavy. The fermentation process will take about a week. The room temperature must not exceed 23°C. The readiness of the snack is determined by taste. Salting can be put on the table as a side dish for meat or fish dishes.
