How to choose a beef heart
When choosing a beef heart in a store or on the market, you should be aware that a chilled product contains much more nutrients than a frozen one. Therefore, it is better to give preference to a chilled heart. You need to pay attention to the color of the product – it should be dark red and smell like fresh meat, not have stains and extraneous gray deposits. Vascular tubes and superficial fat must be removed. The very structure of the heart is very elastic, therefore, when pressed, the fresh beef heart should take its previous shape. The most delicious is the heart of young animals.

Beef heart goulash recipe
Ingredients:
– beef heart – 500 grams; – flour – 1 tablespoon; – oil – 1 tablespoon; – tomato puree – 1 tablespoon; – onions – 1 onion; – milk – 400 milliliters; – vegetable oil – 1 tablespoon; – pepper, salt, bay leaf to taste.
Before cooking, cut the beef heart lengthwise into two halves, rinse the heart well with running water, remove all blood clots and large vessels (they are very tough and can spoil the taste of the dish). Then take a small saucepan and soak the heart in cold water for several hours, changing the water periodically. How many times to change the water, determine for yourself – the latter should be transparent.
To make the heart softer, you can soak it in milk
After soaking, rinse the offal again with cold water and cut it into small cubes, about 3 by 3 centimeters in size. Cut the onions into rings and fry in vegetable oil in a small Teflon skillet, add a spoonful of tomato paste there and simmer for another five minutes. Cook the beef heart in a small saucepan for half an hour.
Then put the goulash pieces, prepared onion and tomato into a thick skillet and fry everything together. Season with salt and pepper to taste, add your favorite spices, bay leaf. Pour just enough water into the pan to cover all the pieces of the prepared dish, close the lid. Preheat the oven and place the skillet in the oven for 1–1,5 hours to heat the beef heart well. The same goulash can be cooked in a slow cooker.
While the meal is being prepared, prepare a side dish – fresh vegetable salad, mashed potatoes, pasta, or whatever you like. When the beef heart goulash is done, place it on a platter and serve with a side dish.
