Beef chops: video recipe for cooking
Not every housewife dares to cook beef chops, fearing that they may turn out to be too tough, but this is completely wrong. From this type of meat, they come out no less juicy than from pork, and it is quite simple to fry them.
Selection and preparation of beef
Delicious beef chops are made with the right meat. The best piece for this is a tenderloin of young veal, which can be distinguished when purchased by the homogeneous consistency of pale pink meat. This part of the mascara will be the softest, but even it needs preparation. The tenderloin must be cleaned of veins and films, if any, and then cut into portions of not too large thickness across the fibers. Then you should beat off the pieces on both sides, without overdoing with this process: if the meat turns into a kind of minced meat, it will not become tastier, and the appearance of the chops will be lost.
The beef will turn out to be more tasty if, after beating, sprinkle the pieces with spices and leave them in the refrigerator for an hour.
To fry the chops, you will need: – 1 kg of already beaten, salted and peppery meat; – 2 eggs; – a little salt; – 50 g of crackers; – 50 g of vegetable oil; – 100 g of meat broth.
Eggs are beaten with salt, each piece is dipped in an egg and rolled on all sides in breadcrumbs. In a frying pan, vegetable oil is heated to a boil, after which chops are laid out in it and fried on both sides until a crust forms. Three minutes is enough for this. But if this process of cooking pork chops could be considered complete, then beef needs additional heat treatment to become softer. To do this, the fried chops are transferred to a saucepan, half a glass of broth is poured into it, after which the meat is stewed under a lid over low heat for another quarter of an hour. The crust with this method of preparation will not be crispy, but the chops themselves will turn out to be juicy and tender.
How to roast beef chops differently
You can also cook meat in the oven. For a dish according to this recipe, the chops are laid out on a greased baking sheet, covered with a sauce made from a mixture of mayonnaise and mustard. Then a ring of onions is placed on each piece of meat, and on top everything is covered with grated hard cheese. The baking sheet must be placed in an oven preheated to 180 degrees Celsius and baked in it until golden brown. Since the meat is thin enough, half an hour is enough for this.
