Few people like pearl barley. It is often called “peasant rice” or “rubber gruel”. However, if you cook this cereal according to all the rules, it will taste just divine.
Cooking real pearl barley porridge for a very long time, but this does not mean at all that you need to stand at the stove for a day, not at all. The porridge will cook itself, and the hostess only needs to look after it occasionally.
How to prepare cereals for cooking
In order for the pearl barley to work, not to be rubbery and simply melt in your mouth, you must try to boil the cereal. To do this, it must be properly prepared. Soak the grain beforehand in cold water for 10-12 hours. This can be done at night. In this case, the ratio of barley and water should be 1: 5, that is, for 200 g of cereal, take 1 liter of cold water.
How to cook delicious barley porridge
Drain the soaked pearl barley in the morning. Heat the milk to 40 ° C, pour in the barley (when cooking, the ratio of milk to cereals should be 1:10, that is, take 200 liters of milk for 2 g of cereal). After the milk with cereals boil, boil the barley for 5-6 minutes. At the same time, do not cover the pan with a lid and make sure that the milk does not burn.
Then remove the porridge from the heat and transfer to a large wide-bottomed saucepan with boiling water. Next, cook the barley in a water bath for 6 hours. Of course, this is a very long time. But at this time, your task is to add water to a large saucepan from time to time.
Due to the fact that the porridge is cooked in a water bath, it will not burn and will languish, as in a Russian oven.
The finished porridge will acquire a beautiful beige shade. But you shouldn’t try the dish right away. The porridge must be removed from the fire. In this case, do not open the lid, let the pearl barley stand for about 10 minutes. Then add heavy cream to the porridge, butter to taste, salt and mix very thoroughly. Another recipe for making delicious barley is rich pickle. To prepare it, you will need: – 2,5 liters of water; – 400 g of pork bones; – 0,5 cups of pearl barley; – 1 onion; – 2 medium or 1 large carrots; – 3-4 pcs. potatoes; – 3 pickled cucumbers; – brine; – vegetable oil; – salt; – herbs.
Soak the pearl barley for several hours in advance. Cook pork bone broth over low heat. To keep it transparent, periodically remove the foam with a slotted spoon. Put the pearl barley in the boiling broth and cook for an hour and a half.
Prepare the vegetables at this time. Peel the potatoes and cut them into cubes or wedges. Chop the onion into small pieces, grate the carrots and cucumbers on a coarse grater.
When the barley is almost ready, dip the potatoes into the soup. Salt onions and carrots in vegetable oil. Add them to the broth. Boil the mixture for 10-15 minutes. Then add the cucumbers and some pickle to your taste. Taste the soup and season with salt. Cook for another 20-30 minutes. Then sprinkle the pickle with herbs (fresh or dried) and leave to sweat under the lid for a few minutes. Serve the pickle hot with sour cream.
