Kurabye is a type of flour product that came from Azerbaijani cuisine. Traditional biscuits are round in shape and are made from short-buttered dough. Finished products can be glazed with lean sugar mixed with sour lemon or pomegranate juice. In Russia, kurabye in the form of flowers or shells is more popular – such cookies are deposited using a pastry bag.

Try to make traditional cookies baked in Azerbaijan. For the dough, you need the highest quality wheat flour, best of all grit. Cookies baked according to this recipe are very crumbly and tender.

You will need: – 500 g of finely ground wheat flour; – 250 g of butter; – 50 g of honey; – 200 g of icing sugar; – 0,75 cups of milk; – 8 cloves buds; – 1 teaspoon of chopped lemon zest; – 0,5 , 1 teaspoons of ground cardamom; – XNUMX teaspoon of vanilla sugar.

Soften the butter until sour cream and rub together with powdered sugar. Grind the clove buds in a mortar or coffee grinder, add them to the oil mixture along with honey and cardamom. Mix everything thoroughly, then pour in the milk and in portions add the pre-sifted flour. Knead a smooth, smooth dough.

If the dough is too dry, pour in some more milk.

Let the dough stand in the cold for a quarter of an hour. To prevent it from drying out, cover it with cling film. On a board sprinkled with flour, roll out the cooled dough into a 1 cm thick layer. Cut a round cookie with a glass or a metal notch, spread it on a dry baking sheet.

Preheat oven to 180 ° C and bake cookies for about 5 minutes. Remove the finished kurabi from the baking sheet, chill on the board and sprinkle with vanilla sugar mixed with powdered sugar.

Cookies can be glazed over. Mix the juice of lemon or pomegranate with powdered sugar, heat it up and cover the finished kurabi with a hot mixture

At home, you can quickly make beautiful crumbly cookies in the form of shells and flowers. It is made from a thinner dough and deposited on a baking sheet using a piping bag with a star nozzle.

You will need: – 2 cups of wheat flour; – 2 eggs; – 130 g of butter; – 1 glass of sugar; – 0,25 cups of milk; – a pinch of vanillin.

Beat the eggs with granulated sugar until the crystals are completely dissolved. Add softened butter and vanillin, gradually add sifted flour. Knead a soft dough and place in a piping bag with a star nozzle.

Grease a baking sheet with butter and sprinkle with flour. Plant cookies in the shape of roses, shells, or curls. Place the baking sheet in an oven preheated to 200 ° C and bake until tender – this will take about 15 minutes. Remove the kurabi from the baking sheet, chill and serve with tea or coffee.
