Baked pork with oranges: an original recipe. Video
Baked pork is one of those dishes that are cooked too often to be called original or served as a kind of “highlight” of the menu that will surprise guests and households. However, the situation can be corrected, moreover, it is very simple: you just need to add oranges, and the meat will become juicier and acquire a special taste and aroma.
Selection of ingredients and making the marinade
Pork in oranges is an original recipe, but it is not difficult to buy products for this dish, since there are no exotic ingredients in it. You will need:
– 1 kg of pork; – 200 g of dry white wine; – 4 oranges; – 2 sweet bell peppers; – 3 cloves of garlic; – 100 g of olives; – 2 medium-sized onions; – 3 tbsp. mustard; – 2 tsp. salt and sugar; – 1 tsp each. ground black pepper and coriander; – olive oil.
Cut the meat into portions, rub with salt and pepper. Take 2 oranges, squeeze out the juice and pour into a deep bowl. Then grind the garlic using a special press and add to the juice. Put mustard, sugar, salt, ground coriander there and mix. Finally, pour the olive oil and wine into a bowl, and then stir the resulting marinade again. Add pre-cooked meat there and refrigerate overnight.
How to cook baked pork with oranges
When the meat is well marinated, proceed to the last stage of cooking. Wash the bell peppers, cut in half, peel and divide into 8-10 slices. Then peel and cut the onion into rings. Wash oranges and make thin circles out of them. Olives are easiest to cut in half lengthwise, but you can chop them into circles.
When preparing this dish, you do not need to peel the oranges, but if you are afraid that the peel will add bitterness to the dish, remove it
Brush a baking sheet or baking dish with olive oil, then mix oranges, bell peppers, onions and olives on the bottom. Then place the pieces of pork on top, then cover the molds with foil and secure it securely. While you are laying out the ingredients, the oven will just have time to warm up to 180 degrees.
Place the baking dish in the oven and cook the meat for an hour and a half. Then remove the foil and continue cooking the pork for another 20 minutes. During this time, it will not only bake well, but also acquire a beautiful ruddy crust. To add a richer flavor to the dish, remove the foil, pour the remaining marinade over the meat and simmer in it.
Pork in oranges should be served hot immediately after cooking, when the taste and smell of fruit and meat is most pronounced. This dish can be served with potatoes, rice, buckwheat porridge and other side dishes of your choice.
