Baked, grilled and fried meat contains ingredients that are harmful to the heart

Thanks to baking, grilling or frying, the meat not only gains taste, but also looks more appetizing. Unfortunately, such treatment produces substances that are dangerous to our health, according to research by Korean and Australian scientists.

What happens to red meat when frying?

Caramelization in red meat at high temperatures (for example, when roasting, frying and grilling) causes the formation of compounds that may increase the risk of heart disease, stroke and diabetes complications, research scientists from the University of South Australia (UniSA) and Gyeongsang National University ( South Korea).

Scientists investigated the health effects of two diets – one high in red meat and processed grains, the other high in whole grain dairy products, nuts and legumes, and white steamed, boiled and stewed meats.

They found that a diet high in red meat significantly increased the levels of AGEs (advanced glycation end products) in the blood, suggesting that it may contribute to the development of disease. When red meat is fried at high temperatures, such as grilling, roasting or frying, it forms compounds called advanced glycation end products (AGEs) that can build up in the body when eaten and interfere with normal cell function, explains UniSA’s Dr. Permal Deo.

– Consumption of foods with high AGEs can increase our total daily AGE intake by 25%, with higher levels contributing to vascular and heart stiffness, inflammation and oxidative stress – symptoms of osteoarthritis, the researcher added.

What instead of fried and baked dishes?

Highly preventable cardiovascular disease is the leading cause of death worldwide, with Australia accounting for a fifth of all deaths.

According to experts, slow-cooked meals can be healthier than fried or baked dishes.

The journal “Nutrients” informed about the results of research by scientists from Korea and Australia.
