Delicate fish with carrots, onions, celery and aromatic spices, baked in the oven, will become a favorite dish of your household. This simple and light dish does not require any special cooking skills from you, you just need to prepare all the necessary products and strictly follow the recipe.

If you decide to diversify your usual diet a little and surprise your household with unusually tasty and aromatic fish from the oven, stock up on all the necessary products for its preparation in advance: – 1 kilogram of fish fillet; – 2 heads of onions; – 2 medium carrots; – 2 stalks of celery ; – 1 sweet bell pepper; – bay leaf; – 2 sprigs of thyme; – 2 tomatoes; – vegetable oil; – ground black pepper; – 150-200 grams of Mozzarella cheese.

You can use absolutely any fish for baking (haddock, cod, trout, mackerel). But you want to eat, not sit and remove bones. Therefore, it is still better to take a fillet of your favorite fish for this.

How to cook fish with vegetables in foil?

The first step is to prepare the vegetables. To do this, peel the carrots, wash and grate on a coarse grater (you can cut them into small cubes, as you like). Peel the onion, chop it into medium cubes. Cut off the cap of the bell pepper, remove all partitions and seeds, cut into strips or half rings. Chop the celery stalks randomly, but not too coarsely.

To keep your eyes from watering when slicing onions, it is recommended to often moisten the knife and onion in cold running water.

Pour some vegetable oil into a skillet or stewpan, heat and place the prepared and chopped vegetables. Add bay leaves and thyme. Salt vegetables lightly and simmer until cooked, stirring occasionally. Place the foil on a large skillet or baking sheet, brush it with vegetable oil (otherwise the fish will stick to the foil tightly). Place the previously washed and dried fish fillets on the foil. Season the fish with lightly salt and pepper, top with cooked vegetables (don’t forget to remove the bay leaves) and the sliced ​​tomatoes.

Now wrap the fish with vegetables in foil, send it to the oven preheated to 200 degrees for thirty minutes. After this time, take out the fish, unfold the foil and make a kind of boats out of it so that the resulting juice does not flow out. Grate the cheese on a coarse grater and sprinkle it generously on the fish, send it back to the oven for five minutes. During this time, the cheese should brown a little. Serve hot with rice or fresh vegetables. It turned out to be unusually tasty: the fish is soft, juicy and tender, and vegetables perfectly complement this dish.
