You can bake any fish: white and red, fatty and lean, delicious and quite affordable. Supplement it with vegetables, spices and seasonings – the dish will turn out to be tasty and low-calorie.

How to deliciously bake fish in the oven

An interesting option for Sunday lunch is salmon cooked with wine and spices.

You will need: – 4 large salmon steaks; – 1 onion; – 1 glass of dry white wine; – 1 teaspoon dried thyme; – 1 teaspoon dried rosemary; – 0,5 lemon; – olive oil; – salt; – freshly ground black pepper.

Cut the onion into thin rings and sauté in hot olive oil until golden brown. Place the salmon chunks in a skillet and let the fish brown. Salt the steaks, sprinkle them with freshly ground black pepper, thyme and rosemary, pour in the wine. Put the pan on fire for 10 minutes, during which time the wine should completely evaporate.

Cook salmon without removing the skin: this will make the fish more juicy.

Cut the lemon into thin circles, remove the seeds. Place the lemon circles over the salmon and place the pan in the oven for 7 minutes. Strain the broth formed during stewing and pour into a gravy boat. Serve the baked fish with fried potatoes or rice, and pour over the sauce for each portion.

Cod baked with potatoes and olives

You will need: – 1 kg of cod fillet; – 1 kg of potatoes; – 3 red onions; – 0,5 cups pitted olives; – a few sprigs of fresh basil; – olive oil; – 0,5 lemon; – balsamic vinegar; – salt; – freshly ground black pepper.

Peel the potatoes, cut into large cubes, boil in salted water until half cooked and discard in a colander. Heat olive oil in a skillet. Chop the onion finely and fry until soft in heated olive oil. Add olives, some balsamic vinegar, salt and pepper to the skillet. Lay out the potatoes and stir gently. Keep the mixture on fire for 5-7 minutes.

Grease the refractory form with oil, put the potatoes, put the cod fillet, cut into large pieces, on top. Sprinkle the fish with finely chopped basil, salt and freshly ground pepper, lightly drizzle with lemon juice. Bake for 15–20 minutes in an oven preheated to 200 ° C.

You will need: – 400 g of fish fillets; – 2 onions; – 2 carrots; – 1 glass of milk; – butter; – crushed crackers; – 80 g of parmesan; – a bunch of parsley; – 1 glass of rice; – 2 eggs; – olive oil; – salt; – pepper.

Boil rice until half cooked. Cook the carrots and cut into cubes. Chop the onion into rings and fry until golden brown. Cut the fish fillet into small pieces and add to the onion. Combine rice with carrots and mix.

Grease a baking dish and add some of the rice to it. Place the fish, sautéed onion on top and cover with the rest of the rice. Grate Parmesan, beat eggs with milk, salt and pepper. Pour the milk and egg mixture over the rice and fish. Sprinkle Parmesan on top and bake in the preheated oven. Garnish each serving with fresh parsley sprigs before serving.
