Beef brains are a rare dish. Meanwhile, they are not only tasty, but also useful, as they contain potassium, phosphorus, calcium, magnesium, iodine, and iron. These elements help to improve the functioning of the cardiovascular and immune systems. And vitamins B1, B2, E and PP normalize cerebral circulation and functions of the nervous system. Cooking beef brains takes a little time, but it should be borne in mind that the product requires mandatory preliminary preparation.
Ingredients: – beef brains – 500 g; – table vinegar 9% – 4 tablespoons; – onion – 1 pc .; – bay leaves – 2-3 pcs .; – lemon juice – 1 tbsp. l .; – fresh herbs – 1 tbsp. l .; – salt to taste; – vegetable oil for frying – 0,5 l.
When buying brains, pay attention to the shell – it should be intact, there should not be a lot of blood on it. High-quality beef brains are distinguished by a fairly dense consistency and lack of odor
For batter: – premium flour – 4 tbsp. l .; – chicken egg – 4 pcs.; – butter – 2 tbsp. l .; – milk – 1/2 cup; – sugar – 1 tsp; – salt and ground black pepper to taste.
Carefully remove the thin film from the brains and soak for an hour and a half in cold water to which vinegar has been added. Replace fresh water 4–5 times. Put a pot of water on the fire with salt, peeled and finely chopped onions, bay leaves and lemon juice. Place the brains in a saucepan and cook over medium heat for 20 minutes.
In the meantime, prepare the batter. Mash the softened butter and egg yolks. Whisk the whites until firm. Use a blender to combine flour, milk, sugar, yolks, salt and pepper. Gently add the whipped egg whites into the batter and mix gently.
Remove the boiled brains from the pan on paper napkins, dry them and cut into small pieces. In a saucepan or deep skillet over high heat, heat vegetable oil, bring to a boil, and reduce heat to medium. Take pieces of beef brains with a fork, dip them in batter and send them to hot oil. Fry for 3-4 minutes, then place on a wide dish covered with a paper towel (the paper will absorb the excess oil).
Cover a baking sheet with special baking paper, lay out the pieces of brain fried in batter. Place the baking sheet on the upper level of the oven, preheated to 200 degrees, for 5-10 minutes. The beef brains are ready. When serving, sprinkle them with chopped fresh herbs, set the sauce separately.
Brown sauce is ideal for brains in batter. Toast 1 tbsp. l. flour in 1 tbsp. l. butter until brown. Dilute with 1 cup salted broth and bring to a boil. The sauce should be thick
For lovers of delicate taste, you can serve healthy classic natural yogurt or sour cream in batter to your brains. Beef brains, cooked according to any recipe, are a separate dish, but if you need a side dish, then fried or mashed potatoes will be ideal.
