Avocado and cucumber, despite such an exotic duet, go well together in a vegetable salad. And if you add lean chicken breast or boiled eggs to the dish, the dish will become a complete, but light dinner for the whole family.

Diet recipe for making avocado vegetable salad with cucumber

Ingredients: – 1 avocado; – 1 large cucumber; – 50 g lettuce; – 1 small head of purple onion;

For refueling: – 2 tbsp. olive oil for salad; – juice of 1 lime; – 30 g of fresh parsley; – 1 clove of garlic; – a pinch of ground black pepper; – 10 g of sea salt.

The ripeness of the avocado is indicated by the softness of the fruit, but not friability. You can check this fact by lightly pressing on the skin. If the dent is darkened and does not even out, you should not take such a fruit

Rinse the lettuce leaves, towel dry and break into small flakes. Cut the avocado lengthways in a circle around the pit and separate the halves. If it’s mature, you can do it easily. Remove the hard core with a spoon. Carefully remove the skin from the fruit and cut it into slices and the cucumber into slices 2-3 mm thick. Cut the onion into half rings and pour over with boiling water. Put everything in a salad bowl and prepare the dressing.

Pour the parsley with boiling water for 3 minutes, then let the water drain in a colander. Toss herbs, a clove of garlic, salt and pepper in a blender, add olive oil and lime juice. Grind the mixture until smooth and season the vegetables. Stir the salad and serve as a separate dish or side dish.

Hearty avocado salad with cucumber, chicken breast and apple

Ingredients: – 150 g chicken breast; – 1 avocado; – 2 medium cucumbers; – 1 green apple; – 5-6 green onion feathers; – 1/2 lemon juice; – natural yoghurt of high fat content; – 0,5 tsp salt.

Fry the chicken breast in a skillet over medium heat for 5-6 minutes on each side, preferably without oil. Cut the avocado pulp into slices. Cut the apples and cucumbers into cubes, the cooled white meat into thin strips, and finely chop the onion. Combine all the ingredients in a bowl or salad bowl, salt and season with lemon juice and natural yogurt.

Delicate avocado salad with cucumber and eggs

Ingredients: – 1 avocado; – 1 large cucumber; – 3 chicken eggs; – 200 g of Chinese cabbage; – 3 tbsp. olive oil; – 1 tbsp. lemon juice; – 0,5 tsp salt; – a pinch of ground black pepper.

Hard-boiled eggs and cover with cold water. Cut the skin off the cucumber and cut into strips. Cut the avocado into halves and carefully remove the flesh with a tablespoon, leaving the skins intact, cut them into small slices. Remove the shells from the cooled eggs, throw them into a bowl and chop with a fork or press. Put vegetables and chopped cabbage there, salt. Prepare a dressing with lemon juice, oil and pepper, pour into a bowl and mix the salad thoroughly. Divide into avocado cups and serve as a snack.
