Artichokes baked with garlic and lemon
 

Many (of those who have access) do not prepare artichokes simply because they do not know how to do it. And this can be done very simply and quickly. The main thing is to know how to clean them properly, but it is not difficult either. Here’s a short video to help you.

Ingredients:

 

500 grams of artichokes, 2 tablespoons of extra virgin olive oil, the juice of one large lemon, 2 cloves of garlic, unrefined salt.

Preparation

In a medium bowl, combine olive oil, a couple of tablespoons of water, lemon juice, minced garlic, and a pinch of salt.

Butcher the artichokes. To do this, you need to cut off everything unnecessary from them. First cut off the top – about a third. Then cut off the stem of the artichoke and peel the dense, dark petal leaves to get the flesh of a light green color. This core of artichokes is what we need. Slice each fruit lengthwise and send it straight to the bowl. Soak the artichoke halves well with the lemon-olive dressing, and try to do this as soon as possible, as the artichokes oxidize quite quickly and begin to darken.

Let the artichokes marinate for 5 minutes, then place in a baking dish. Preheat the oven to 220C and roast the artichokes there for 20 minutes. In the middle of this process, use tongs to flip the artichokes to the other side to prevent them from burning.

Serve the cooked artichokes with lemon wedges.
