After 1,5-2 months after the first shoots, flowering arrows begin to appear on winter garlic. Experienced gardeners mercilessly remove them so that nutrients from the soil go to the head of the garlic, and not to the peduncle. The most zealous housewives collect arrows in order to prepare fragrant seasonings from them for the summer table or prepare them for the winter.

Aromatic pork seasoned with fresh garlic arrows
You will need:
– pork pulp 300 g; – garlic arrows 50 g; – onions 1 pc .; – soy sauce 0,5 tbsp.; – vinegar 2 tbsp. l .; – honey or granulated sugar 0,5 tsp; – boiling water 300 g; – salt, red pepper to taste.
Cut the pork into 15 pieces–20 g. Place in a deep bowl, sprinkle with salt, pepper and sugar. Drizzle with a tablespoon of vinegar and soy sauce mixture and marinate for 30 minutes. Cut the garlic arrows into pieces of length 3–4 cm and cover with boiling water. After 2–Drain the water for 3 minutes and add a tablespoon of vinegar. Fry the meat and onions until golden brown, add the pickled garlic arrows and cover. Place the dish in an oven preheated to 180 degrees and cook for 20 minutes.
To use the garlic arrows for food, do not cut, but pluck them out. The most delicate part of the arrows is in the middle of the plant.
The recipe for cooking adjika for the winter
To prepare adjika without cooking, you will need:
– arrows of garlic 500 g;
– a bunch of cilantro 100 g;
– a bunch of parsley 100 g;
– hot chilli pepper 1 pc .;
– salt 0,5 tsp;
– vegetable oil 150 g.
At the arrows, cut off the peduncle along with the rigid part of the stem. Rinse the arrows with running water and cut into small pieces of 4–5 cm. Prepare cilantro, parsley and pepper, from which all seeds have been removed. Scroll arrows and greens with red pepper in a meat grinder. Season with salt, add vegetable oil and mix well. Place in small sterilized jars and top with vegetable oil. This seasoning does not need additional sterilization and can be stored well for up to three months in the refrigerator.
Arrows of garlic can be dried and then crushed with a mortar and pestle into a flavored flour. This additive will bring new notes to the taste of your favorite dishes.
Green Arrowhead Seasoning
You will need:
– arrows of garlic 200 g; – leaves of young nettle 100 g; – leafy celery 100 g; – salt 1 tsp; – vinegar 50 g; – vegetable oil.
Rinse all ingredients well and discard in a colander. Pour boiling water over the leaves and let them stand for 10–15 minutes, then remove from water and squeeze well. At the shooters, cut off the peduncle and cut into pieces of length 4–5 cm. Marinate them in vinegar for 15 minutes. If there are a lot of shooters, pickled garlic can be put in a glass jar and used as needed. Cut or tear the celery greens into small pieces with your hands. Alternating, scroll everything through a meat grinder, salt, add vegetable oil and mix. Instead of butter, you can use yogurt, sour cream, or mayonnaise. You need to store this seasoning in the refrigerator for no more than 3 days.
