Aronia liqueur: 3 recipes at home

Fragrant liqueur from chokeberry

For this recipe, it is better to use mountain ash, which was harvested after the first frost, then it becomes sweeter and less tart.

Ingredients

  1. Black rowan – 1 kg

  2. Food alcohol (96%) – 500 ml

  3. Vodka – 500 ml

  4. Granulated sugar – 500 g

  5. Water – 250 ml

  6. Carnation – 5 pcs.

  7. Half a pod of vanilla

  8. Zest of one lemon

  9. Zest of one orange

Method of preparation

  1. If for some reason you have collected the chokeberry before the first frost, then put it in the freezer for several days.

  2. Then defrost, knead a little and transfer to a container that you will use to further prepare the liquor.

  3. Now we throw all the spicy ingredients (zest, vanilla and cloves) into the jar, pour all the prepared alcohol, mix thoroughly and leave to infuse for 30 days in a dark and cool room.

  4. After a month, we drain the infusion, and squeeze the berries through gauze.

  5. Cook the basic sugar syrup and cool it to room temperature.

  6. We mix rowan infusion and sugar syrup, shake well and after filtering we bottle it (preferably from dark glass).

  7. Now we move on to the “aging” stage, for this we leave the drink in a dark and rather cool place for 3-6 months.

  8. After saturation and aging of the liquor, you can proceed to the tasting.

Aronia liqueur with rosemary and cherry leaves

Ingredients

  1. Chokeberry – 1 kg

  2. Food alcohol – 500 ml

  3. Sugar – 1 kg

  4. Water – 1 L

  5. Cherry leaves – 130 pcs.

  6. A small sprig of rosemary – 1 pc.

  7. Vanilla sugar – 8 g

  8. Citric acid – 2 tsp.

  9. Medium orange – 1 pcs.

Method of preparation

  1. Pour the washed black mountain ash into a saucepan with a thick bottom, add cherry leaves, rosemary and water. Bring to a boil and simmer for another 10 minutes over low heat.

  2. Now add granulated sugar, citric acid and continue to cook for another 10 minutes.

  3. Squeeze out the juice from the orange and add them to the mountain ash along with vanilla. Stir, remove the mass from the heat, cool to room temperature, and then send the pan for a day in the refrigerator.

  4. After a day, we filter the fragrant broth, mix it with food alcohol and pour it into a bottle of a suitable size.

  5. Now the liquor needs to brew for about 2-3 months in a dark, cool place.

  6. After this time, we filter the finished chokeberry drink and we can start tasting.

Spicy chokeberry liqueur

Ingredients

  1. Black rowan – 3 kg

  2. Alcohol (60-75%) – 700 ml

  3. Water – 500 ml

  4. Granulated sugar – 1 kg

  5. Honey – 4 Art. l

  6. Vanilla pod – 1 pc.

  7. Carnation – 5 buds

  8. One lemon juice

Method of preparation

  1. We shift the berry into a glass jar (if the mountain ash was collected before the first frost, then repeat step 1 from the first recipe), add sugar, vanilla and cloves. Let it brew for 3 weeks in a dark and cool place, shaking occasionally.

  2. After this time, it is necessary to drain the alcohol tincture, and pour the berries with water and leave for 2-3 hours.

  3. Then drain the water and mix it with the tincture.

  4. After 14 days, add lemon juice, honey to the liquid and shake well. We let it brew for about half a year.

  5. Before tasting, the finished drink is filtered and bottled.
