Apricot syrup: 2 recipes at home

Fragrant and very tasty apricots are an excellent base for making homemade syrup.

The use of apricot syrup is quite wide – it is a lubrication of cake layers, and an additive to pancakes or ice cream, and a popular ingredient for alcoholic and non-alcoholic cocktails.

Classic apricot syrup recipe

Ingredients

  1. Apricots – 2 kg (pitted)

  2. Water – 500 ml

  3. Sugar – 400 g (for every 600 ml of juice)

Method of preparation

  1. Place water and fruit in a heavy bottomed saucepan.

  2. Place over medium heat and simmer until softened, about 30-40 minutes, depending on the fruit. During cooking, stir the fruit from time to time and, as it were, crush them with a spoon.

  3. Drain the apricots into a fine sieve lined with two layers of gauze or muslin. Strain for 8 hours in the refrigerator without squeezing out more juice, otherwise the syrup will be cloudy.

  4. After the specified time, measure the amount of apricot juice, pour it into a clean saucepan, also measure the required amount of sugar and add to the juice. 

  5. Bring everything together to a boil and simmer for 5 minutes, over high heat, stirring occasionally, so that the syrup reaches the desired consistency and the sugar is completely dissolved.

  6. Pour hot syrup into hot sterilized jars.

  7. Close with sterilized lids, turn upside down.

  8. Wrap the jars warmly and leave in this state until cool.

Rich Syrup Recipe Without Water

Ingredients

  1. Apricots – 1 kg (pitted)

  2. Granulated sugar – 1,3 kg

Method of preparation

  1. Apricots are cut into small pieces and covered with sugar.

  2. Then prepared apricots and sugar are poured into a saucepan with a thick bottom, covered with a lid and sent to the cold for 10-12 hours. During this time, fruit cutting will give juice. It will not be very much, but this will be enough so that the mass does not burn on minimal heating.

  3. Warm up the sweet mass with fruit for no more than 5 minutes. After that, the fire is turned off, and the apricots in sugar are allowed to cool.

  4. After that, cooking continues at the same pace. In total, boil apricots for 5 minutes 4-5 times. In conclusion, the pieces of fruit are filtered through a sieve, and the syrup is boiled for a couple more minutes before being rolled into jars.
