Useful properties of seaweed
In terms of their nutritional value, seaweed is inferior to products prepared from land plants, but they have much more vitamins and microelements that they accumulate from their habitat – sea water. The high content of these elements makes algae not so much a source of nutritional energy as a pharmacy containing unique medicines necessary for the health of the human body.
They contain almost the entire periodic table, as well as vitamins A, D, E, C and groups B, K, PP (nicotinic acid), pantothenic and folic acids and a small amount of vegetable protein. Colloidal polymers specific to underwater flora – agar and alginic acid – have the same properties as the pectin found in berries and fruits, and allow these amazing plants to absorb almost 300 times their own weight of water. Therefore, you can often buy seaweed not only in pickled form or in the form of salads, but also in dry form, packaged in hermetically sealed bags.
Before cooking, rinse dry seaweed under running cold water and soak for 8-10 hours, after which they can be boiled and used for salads and snacks
