Here is the simplest and most affordable recipe for 1 kg of apples and 120 ml of water:
- wash, dry the apples, cut into 6-8 slices together with the peel and seeds
- put in a saucepan or stewpan with a thick bottom and cover with water
- put simmer on low heat for 25-30 minutes, stirring with a wooden spatula
- cool the resulting mass and strain through cheesecloth or nylon sieve. The expressed liquid is pectin.
Important: the pectin obtained in this way can be rolled up still hot in jars or, by pouring into molds, sent for storage in the freezer
This product will retain its qualities for a whole year.
