Chicken meat and apples are a very good combination. A salad with these ingredients has a fresh and savory sweet and sour flavor that can be enhanced by adding the right ingredients. A variety of vegetables, cheeses, berries and spices go well with chicken and apples.
Quick salad with apples and chicken
You will need: – 250 g of chicken breast; – 2 large sweet and sour apples; – 3 boiled eggs; – 1 teaspoon of mustard; – 1 teaspoon lemon juice; – 0,5 cups sour cream; – salt; – freshly ground black pepper; – a bunch of fresh lettuce (iceberg or oaky).
Boil the chicken breast or grill it. Chill the meat and cut into thin strips. Peel and chop the apples. Grind the egg whites. Line a flat dish with lettuce leaves. Top with egg whites, chicken and apples.
In a bowl, combine sour cream, pounded egg yolks, mustard, salt, lemon juice. Pour the sauce over the salad, sprinkle with freshly ground black pepper and serve.
Chicken, apple and cheese salad
Salad with spicy cheese, such as Roquefort, is distinguished by its original taste.
You will need: – 200 g of white chicken meat; – 2 green apples; – 180 g of Roquefort cheese; – a bunch of arugula; – 0,5 cups of shelled walnuts; – 0,25 cups of olive oil; – 1 teaspoon of liquid honey; – 1 teaspoon of Dijon mustard; – 1 tablespoon of apple juice; – salt; – 1 tablespoon of wine vinegar.
First, boil or microwave chicken meat. Cut it into strips or cubes. Grind the Roquefort in the same way. Peel and cut the apples into very thin slices. Wash and dry the arugula and place in a clear salad bowl. Place chicken and apples on top, pour cheese cubes on top.
Roquefort can be replaced with another type of cheese. Try Parmesan or Dor Blue
Whisk the olive oil with vinegar, mustard, honey, salt and pour the resulting sauce over the salad. Sprinkle it with coarsely chopped walnut kernels.
Warm salad with caramelized chicken and apples
This salad has an unusual taste. Cook it just before serving and serve with toasted white bread.
You will need: – 200 g of chicken fillet; – 100 ml of apple juice; – 2 apples; – 1 sweet pepper; – a pinch of hot red pepper; – 3 tablespoons of sugar; – salt; – vegetable oil; – 1 tablespoon of butter. – freshly ground black pepper.
Rinse the chicken fillet, peel off the films, dry with a paper towel. Cut the chicken into strips, season with salt, pepper and sauté in hot butter. Place the strips on a paper towel to drain off excess grease.
Wash and peel apples and bell peppers, removing seeds and partitions. Cut the pepper into thin rings and lightly fry in vegetable oil. Cut the apples into slices. In a saucepan, mix the sugar with a couple of tablespoons of water and heat until the mixture turns golden. Dip the apple slices into it so that they are completely covered with caramel. Remove the apples and set aside on a buttered plate.
In a saucepan with sugar, add butter, apple juice and a pinch of red pepper. Boil the mixture until thick. Put the chicken, pepper and apple slices in a salad bowl, pour over the sauce and serve.
