The great variety of cultures that have passed through this community, have given rise to still-preserved recipes, which have made southern Spain one of the places that can most boast of its culinary tradition in all of Europe.

But what are these highly valued and well-known dishes that everyone should try? Pay attention:

Gazpacho

How could it be otherwise, the first dish that you should try if you have not done it yet is gazpacho, although you have probably already tasted this cold tomato soup, as it is prepared in many other places in the world. What’s more, it is a very nutritious dish.

It is made mainly in summer, and as we have pointed out its main ingredient is tomato, which are accompanied by others such as cucumber, garlic, pepper, onion, olive oil and vinegar.

The second dish that every Andalusian has tried, and that any visitor to the area should try is salmorejo. It is often said that this dish is similar to gazpacho, although it is thicker and it is usually eaten with bread.

If we get exquisite, the salmorejo par excellence and the most authentic of all is the Cordovan. And, of course, this dish cannot miss the strips of serrano ham and chopped hard-boiled egg as accompaniments, or decorative elements, according to your preferences.

Shrimp omelete

Coming from the province of Cádiz, the shrimp omelette is another of the most popular dishes in Andalusia. It is a thin and crunchy omelette whose main ingredient is shrimp, used to prepare a dough of this ingredient together with wheat flour, chickpeas, onion and parsley.

Fried fish

Fried fish is a very easy dish to prepare, but like the rest, it is exquisite. It is very typical in Andalusia, specifically in Malaga and the coastal areas. And, of course, it is easy to find it in any bar or beach bar.

To prepare the fried fish, this it is coated in flour and then fried in olive oil. And it stands out for mixing squid, anchovies, squid or whitefish, among other fish.

Jabugo ham

Despite being typical of the Sierra de Huelva, this Premium version of the ham is the most coveted in the world. A very special care is necessary during the twelve months of the year, feeding the pig in a special way, although without a doubt it is worth it.

Migas

And to conclude, we end with a very well-known dish throughout the country, migas. We point out that despite being a typical dish from Andalusia, it is also from other parts of the Spanish territory, highlighting that in each area the influences have generated differences in the ingredients and ways of preparing this dish.

In Andalusia, it is prepared with stale bread, chorizo, garlic, olive oil, water and salt, although egg, pepper or cucumber can be added.

And if these dishes are not enough for you, do not hesitate to try others such as ajoblanco, broad beans with ham, potatoes with cuttlefish or pipirrana. As you can see, there is a great variety of Andalusian dishes.
