Precocious casserole from stewed berries
The number of berries and sugar can be proportionally increased. Cherry pits do not need to be removed.
Ingredients
Cherry – 0,3 kg
Black currant – 0,3 kg
Raspberries – 0,3 kg
Vodka – for pouring berries
Sugars – 120 g
Method of preparation
Pour the berries into a heat-resistant container, pour vodka so that the liquid completely covers the fruits.
Put a sheet of parchment on top, make a few holes with a fork and send to the oven.
Simmer at t = 150 ° C until the berries are firm, change color and become very soft.
Drain the liquid, add sugar to the resulting drink, mix, let stand for 1 day and taste.
Casserole “Palenka”
Berries pre-sort and wash. The volume of one type can be changed in favor of another, while maintaining the total volume – 1 kg.
Ingredients
Raspberries – 0,4 kg
Sweet cherries – 0,3 kg
Cherry – 0,3 kg
Vodka – for pouring berries
Sugar – 0,7 kg
Method of preparation
Pour all the fruits into an enamel bowl, pour vodka until the berries are completely covered.
Place a sheet of parchment on top and make a few holes in it.
Hold in an oven heated to t = 100 ° C for about 10 hours until the berries soften.
Pass the liquid through several layers of gauze, add sugar and heat the mixture, stirring, until a homogeneous syrup is obtained.
Fill the bottles with a “palenka”, cork tightly and let it ripen for 1 year.
Casserole in a bottle
Berries are fresh or frozen. Blackberries can be replaced with cherries, honey with sugar (2 tablespoons), cardamom and nutmeg are also suitable as spices.
Ingredients
Blackberries – 1 cup
Honey – 1 tbsp
Cinnamon – 0,5 sticks
Carnation – 2-3 pieces
Vodka – 0,3 l
Rye flour – for dough
Water – for the dough
Method of preparation
Pour berries and cloves into a thick glass bottle, sweeten with honey.
Lightly chop the cinnamon, add to the blackberries.
Make a strong rye dough, stick it around the vessel from all sides, paying special attention to the neck.
Place in the turned off, well-heated oven overnight.
Cool the finished drink and pour into a small vessel.
Casserole “Spicy-citrus”
Ingredients
Cover – 52 g
Star anise – 18 g
Nutmeg – 28 g
Cardamom – 22 g
Lemon peels – 30 g
Sugar – 0,45 kg
Vodka – 2 l
Method of preparation
Infuse alcohol on lemon zest, drain the liquid into a strong bottle.
Ceiling spices, grate the nut, put in a lemon infusion.
Coat the vessel with a thick layer of sticky rye dough, place in the switched off heated oven (oven) for half a day (night), repeat three times.
Allow the container to cool, open the bottle, drain the infusion, filter and sweeten.
If desired, tint the drink with vegetable raw materials or burnt sugar, filter.
