Desserts are created to give pleasure. By their very appearance, they make the hearts of sweetmeats freeze in anticipation. Homemade treats, carefully made with your own hands, always cheer up. And they also allow you to give free rein to your culinary imagination and experiment with both the content and the form. Today we are creating sweet fads together with “Semushka”, an expert on delicious and healthy products for the whole family.
Brownies in bloom
Brownie chocolate cakes and nuts are made for each other. Especially if it is an almond “Semushka”. Selected kernels of the highest quality are supplied from sultry Chile. Whole large nuts are fried according to all the rules, so they can immediately be added to the dough and used as a decoration.
Melt 200 g of dark chocolate and 180 g of butter in a water bath. Do not overheat the mixture, otherwise it will turn out with grains. We will leave 3 tbsp of glaze for the decor. Separately, beat 3 eggs and 200 g of sugar into a light mass. Pour in the cooled chocolate glaze. In several steps, we introduce 130 g of sifted flour with 1 tsp. baking powder and 2 tbsp. l. cocoa, knead the dough. Add 50 g of roasted almonds, crushed into a large crumb. Fill the baking dish with the dough, level it and send it to the oven at 180°C for 20-25 minutes.
When the brownie cools down, dissolve ½ tsp of gelatin in 1 tbsp of warm water. Add 70 ml of thick cream and the remaining chocolate glaze, beat the air cream with a mixer. Cover the brownies with an even thick layer and put them in the refrigerator for an hour. Then we cut it into identical squares. Cut the almonds into petals and decorate the cakes.
A basket of pleasures
Sand baskets with fruits are a delicacy that will never get bored. Unusual exotic notes will give it a pecan “Semushka”. Externally, it resembles our native walnut, but has a slightly elongated shape and a more delicate taste without bitterness.
Knead the dough from 250 g of flour, 200 g of melted butter, 125 g of sugar, one egg and a pinch of salt. We form a ball and send it to the refrigerator for an hour. Then roll out the dough into a thin layer, cut into small circles, tamp it into tin ribbed molds and bake in the oven at 180°C for 10 minutes.
At this time, we will prepare a citrus kurd. Grate the zest of 2 oranges and lemon on a fine grater. Squeeze all the juice out of the citrus fruits, add the zest, 200 g of sugar and 50 g of butter. Heat the mixture over low heat and, stirring constantly, add 3 beaten eggs in a thin stream. Continuing to stir, we torment the mass until it is completely thickened.
We fill the finished baskets with the cooled kurd by about a third. Spread the apple slices on top, pour everything with maple syrup and send it to the oven for another 10 minutes. Now it’s the decor’s turn. We melt 100 g of milk chocolate, dip the pecan kernels in it, roll them in coconut chips and let them freeze on parchment paper. The final touch is to decorate the baskets with chocolate nuts.
Muffins in a new image
Even the most ordinary muffins can be turned into an exquisite dessert — with the help of an interesting cream and nutty decor. For this recipe, the hazelnut “Semushka”is perfect. These delicious nuts are grown in Abkhazia, so they have absorbed all the power of the southern sun and the unique Caucasian flavor.
Rub 100 g of softened butter with 200 g of sugar, beat in 2 eggs. Sift 250 g of flour with 1 tsp of baking powder and knead the dough with a mixer. We knead 2 ripe bananas into a pulp and also introduce them into the dough. We fill the muffin molds with it, put it in the oven at 200°C for half an hour.
We have time to make a honey ganache. Combine 250 ml of cream with a fat content of 33% and 50 g of liquid honey in a saucepan. Gently heat the mixture over low heat, without letting it boil. We break 200 pieces of bitter chocolate into pieces, dissolve it in a honey-cream mixture and mix it.
Now, in a small saucepan, pour 300 g of sugar into 100 ml of water, bring the mixture to a boil and cook for 5 minutes until a thick caramel is obtained. Carefully put whole hazelnut kernels on toothpicks so that they do not split, and properly “bathe” them in caramel. We fill a pastry bag with honey ganache, spread the cream on the muffins. On top, we sit the hazelnut kernels in caramel.
Cheesecake as if by magic
Homemade cheesecake can be prepared without baking at all. A great option when you suddenly want something delicious. The highlight will be added to it by the original decor of fruit lavash “Semushka”. It is prepared according to traditional recipes only from natural fruits, berries and water. There is not a single gram of sugar or sweeteners in this delicacy, so it will appeal to those who follow the figure.
Pre-soak 1 tablespoon of gelatin in 100 ml of warm water. Knead 250 g of oatmeal cookies into a fine crumb and mix with 100 g of melted butter. We tightly tamp the crumbly mass into a small round shape and put it in the refrigerator.
We combine 200 g of cottage cheese, 250 g of natural yogurt without additives and 3 tablespoons of sugar in a separate container. Beat all the components with a mixer into a homogeneous mass. Continuing to beat, we introduce the swollen gelatin. Carefully pour this mass into the oatmeal base in the form and put it back in the refrigerator to harden.
Make small templates out of thick cardboard in the form of stars, hearts, geometric shapes with through holes. With their help, cut out the decor from fruit pita bread. While the top of the cheesecake has not had time to completely harden, spread the lavash patterns beautifully over the entire surface, slightly drowning them in the curd souffle.
Highly artistic sausages
Everyone, without exception, enjoyed creamy sausages in childhood. Why not treat yourself to this wonderful treat again? Fruit lavash “Semushka”will help to make it even tastier and more interesting. Choose the taste at your discretion: berry pita bread made of cranberries and plums or fruit with plum or dried apricots. This is a real delicate sweetness with a subtle aroma and rich taste of your favorite natural fruits and berries.
We grind 500 g of any shortbread or sponge cookies into a crumb. Add 200 g of softened butter, 3 tbsp. l. cocoa powder. Gradually we introduce a jar of condensed milk. Adjust the density yourself — the mass should turn out slightly loose. We roll several small sausages with a diameter of 4-5 mm out of it, wrap them in plastic wrap and put them in the refrigerator.
With sharp scissors, we cut the fruit pita bread into long strips 7-10 mm wide. We wrap them around the sausages in a spiral, first in one direction, and then in the other. To make the treat more elegant, you can use a pastille of different colors. Soak the sausages in the cold for another half hour, and you can treat your favorite sweets.
